Ingredients:
600 g of cookies
120 g of sugar
250 ml of milk
60 g of cocoa powder
100 g of chocolate
150 g of 33% cream
Preparation process:
Crush the cookies: Take 600 g of cookies and crush them into crumbs using a food processor.
Prepare the chocolate mixture:
In a saucepan over medium heat, mix 120 g of sugar, 60 g of cocoa powder, and 250 ml of milk.
Stir constantly until the mixture becomes smooth.
Combine the crumbs with the chocolate mixture:
Transfer the crushed cookies to a large bowl.
Pour the chocolate mixture over the crumbs and mix well so that the cookie crumbs are completely soaked in the chocolate mixture.
Form the cake base:
Transfer the resulting mass into a cake mold or any convenient container lined with parchment paper, using the remaining cookies as the bottom layer and also as the final layer before glazing.
Spread and tamp down the mass evenly to form a dense base.
Prepare the chocolate glaze:
In a small saucepan, heat 150 g of 33% cream until hot, but do not boil.
Add 120 g of chocolate (previously broken into pieces) and stir until the chocolate is completely melted and combined with the cream to form a smooth glaze.
Finish the cake:
Pour the glaze over the prepared base and spread it evenly over the entire surface.
Let the cake sit at room temperature to cool, then place it in the refrigerator for at least 1-2 hours to set.
Serving:
Once the cake is fully set, remove it from the mold, cut it into portions, and serve.
