Im here to tell you everybody in kansas city has a grill and we know how to use them. Me if its not coal and wood chips your wasting your time, oh a hint. Never clean the grill. You can clean the wire grate but not the lid where the smoke built up the thicker it get the more flavor goes into your meats. If you got chunks peeling off tap the lid once on the ground to knock off the loose stuff. But don't clean it. After a few years your grill will put off so much flavor you'll even get some without chips for smoke, oh soak your chips in warm water put the lid on and cover the hole so it can't get out untill the flame up Stops the open it slightly when it stops smoking flip the meat and add more chips. Cant add too many chips.

Q39 is my Kansas City favorite! Always a wonderful experience and their burnt ends are absolutely scrumptious.

6-6.5 hours? What kind of sorcery is that? It takes me like 12 hours to get to 195 internal at 225 degrees. Also is that choice or prime?
