Transport:
Railway - Usually takes a lot of time but it's worth it. Highly recommended. Cost INR 600 to INR 2k
Flight - All I'd say is convenient. Save your time in transport so that you can spend more of that time on your trip. Flight rates from Mumbai are always fluctuating so better book'em in advance. It cost us a 7k round trip per head.

The origin of the Chinese fishing nets is still not very clear. One perspective is that these were brought to Kochi probably during the 14th Century by the famous Chinese explorer Zheng He from the court of a Chinese emperor Kubala Khan. Historically the Chinese traded with different parts of Kerala. But Chinese fishing nets are seen nowhere except at Kochi, its nearest islands, and connected areas, not even in China.
Another narrative is that the basic design of the fishing nets was brought to Kochi from Macau by the Portuguese who colonised both Kochi and Macau in the 16th century. The Portuguese then redesigned the Chinese fishing nets according to the currents and depth of the sea at Kochi. To clarify this version, studies have referred to the fact that different parts of the Chinese fishing net are known by different Portuguese words like padrao, calusanthy, savaya, bras etc.

Despite being in Fort Kochi/ Mattanchery you forgot to visit the Maharashtrian/Marathi Mandal Temple around which 10-15 Maharashtrian families still live in its surroundings.
Along with that you forgot to visit an iconic restaurant named Pai Dosas, which serves more than 36 varieties of Dosas. Another restaurant which you should have visited was a restaurant named Grand which serves exotic Kerala dishes. But considering the budget it would be very expensive.
On a funny note if serving of alcohol is not a problem then to taste authentic malayali food you should have visited Kerala type dhaba called Shap, which serves authentic tapioca/kappa with fish curry.
In the near future if you intend to visit Kochi i can recommend you more places for sight seeing and famous food places as well.

You have good content but would love to see 2 improvements in your content. Please take it as constructive feedback and not at all as a criticism.
1) Better storytelling
2) Allow people to experience the food, people, or places, like you do, through the videos -- it feels like too many things are cramped in very little time and can't really experience even 1 thing properly.
For #1 - If you have not seen yet, then please see Anthony Bourdain's episodes. He is probably the best travel story teller that I have come across. Definitely, not saying that you should be at that level but potentially take some cues from his way of presentation.
