Waraos (Chinese ) market is amazing! 5 floors of everything and it is surrounded by veggie vendors that stock the street vendors before you wake up. When my girlfriend visits from Bangkok, she takes home a small suitcase of Northern Thai sausage. I usually go to Tianan Street market off 107 it is closer to my condo in Nimman. There is also a guy who makes wonderful pork ribs.
