I once saw an interview with one of the writers on "Dynasty", and he said that different visual cues were used to either make the audience love a character or hate them. With Heather Locklear (Sammy Jo), a real villainess, she was often shown eating large sandwiches and potato chips -- and yet never gaining a pound. "There's no better way to make female viewers hate a woman character", he laughed.
Heather said on her Intimate Portait they had her and Joan eat while they were doing scene because they could deliver lines and eat at the same time and also game them nuance

The reason that these lavish minute-and-a-half opening theme and cast intros don't exist anymore? It used to be that TV shows had 47-50 minutes to tell their story of the week. Now they're down to 42, maybe 43 minutes. They just don't have a minute and a half to waste on the intro. It's a shame.
That, plus, once upon a time, ACTUAL composers (Bill Conti, Henry Mancini, Lalo Schifrin, etc.) were composing the music.
