If you want to change the straps maybe you could sew them inside the waistband for a neater finish, that's what I did when I made a pinafore dress, with buttons on top it could look great :)

I prefer French seams for most things, but for things like the ruffle on the bottom of your apron, I would have used binding. I use the French seams for all structural seams. I've made both a shirt with a ruffled peplum and a dress where I used self made binding tape to cover the raw edges of the gathered parts because I didn't want to loose length with a FS. Yeah, I'm partial to completely finished insides and I do all my sewing by hand, so no serger here either.

Lucy, it is so great seeing your excitement and skill grow with each sewing project you do!!! Also, I don't know how tricky it is for others when it comes to gathers in french seams, but one thing I do is sew the seam regularly, leave the gathering thread in and fold in the raw edges than topstitch at the edge to encase them. It's kind of like a fake french hem and I think it just helps keep the gathering in the right place.
Hi I have a little question. This is my first time with gathers and ruffles. She said the width of the skirt should be the size of the waist and a half to be able to gather, so is the bottom part two times the size of the waist?

You can also do a felled seam. Super easy will look very authentic if your wanting vintage look. Haha. You just mentioned hand felling.

Secondly, my sewing machine AND serger are being serviced right now, this video makes me wish I had them right now!! XD I've been meaning to make an apron for a long time. My hesitation is that I have to do everything "right" ( I have a degree in apparel design, and over 10 years sewing experience) and struggle with just winging it!

I'm glad you finally discovered French Seams! I also don't have a serger (and am sick and tired of serged edges on RTW garments unraveling, so refuse would refuse to use it anyway), resulting in me putting french seams on EVERYTHING. Even things which arguably don't need it. On my most recent project I used it on pockets, and it created too much bulk and limited the amount of space in said pockets. In hindsight I should've used flat-felled seams if I wanted a strong & sturdy finish with less bulk.
