Yessss! you sir have THE best videos on butchering wild game or any meat on youtube. Your videos have given me the confidence to butcher my own deer should i get one rather than paying some one else to do it for, this really is an art form!

Hah! i happen to live in michigan, haven't seen a deer yet, it's this warm weather, but i do know where to look for turkey's now though!
ducks as well, with this weather, but I am seeing geese! thank god the farmers for the most part here have pulled the corn. (Maybee, MI.) that's been a help for some, but not me. I did like getting my gas bill today though...
yeah, my knees are both messed up and i am glad we aren't having that deathly bitter cold like we had last winter i definitely feel it otherwise, im in southeast mi (westland)
not far. yep, had to retire two years ago, still a relatively young man @fifty six from bone stuff myself, knees/hips. you remember two years ago, THAT was my real last winter of working outside. BRUTAL! folks don't realize what it takes. hard to get out now, but with help, I still try. it's hard when you know that freezer is empty of game, after so many years of being stocked. she doesn't mention it, but I hate the meat isn't there for the wife/family as well. hurts my feelings, to be honest with you. best of holidays, Artic.

Nice watching you do those hind quarters Scott and dissecting out the different joints of meat. In surgery we call that following the planes of dissection, so we would say "I'm just following the plane of dissection down to ..." where ever it may be, the natural seams which make cutting through tissue a natural art. Love ya work big fella.

This is a great video. We've been finding massive hogs near my home in Ohio and I've been giving pig hunting some consideration. Your videos are a great inspiration, especially after seeing the full yield of meat you pulled off of that boar. Keep up the great work.
hi Scott, just want to say how helpful your videos have been I've recently started a butchery apprenticeship and your videos are really good for someone like me to see that there are loads of different techniques to butchery and pretty much whatever I learn at work I search for on your channel to see how you do it, most of which is the same as how im taught so is really good to watch after a long day of practice :)

I have watched alot of your videos, but this one is the one i always come back too. Not sure how many times I have watched it but it's up there. hell , I have even done the hog while the video was on the screen. and yet after all that, my finished project never comes close to looking like yours .. so with that said, you make this look WAAAAAYYY to easy. I have now come to giving up on all those nice looking cuts. Now, I just cut out the "fillets" and loin chops and turn the rest into breakfast and italian sausage. and smoked sausage when supplies in the freezer are running low :D

Nice looking pig, I went to south carolina in march and hunted them for the first time with my brother and nefues, we took a 300 pounder. Man that was fun and great eating. This was a great butchering video, Thanks for posting it.
Absolutely, Wild pig taste the same as domestic. The only difference is that is not as fatty , it is very lean. And it is not that dry eating like the (Great white meat that they advertise) Some of the best pork I have ever eaten. If you ever get a chance go after some, the best time of your life.

Great video! I'm lucky enough to have been hunting these fellas my entire life in Texas and have butchered hundreds of them. I'll be changing the way I do a few of my steps thanks to you! I would love to see you make a Capacola from one of those shoulders!!! One thing you may want to try though...all quadrupeds have a lymph node behind the rear knee. If you open the seam behind the knee where all of the muscles come together and tunnel down a bit, you'll find it. If you accidentally cut it when you're boning out the hind, any little piece will RUIN an entire meal. Also, I'm assuming it was a head shot so you couldn't use the head. There is a lot of meat (which you have some wonderful recipes for) to be had there. Please keep the vids coming!

On a side note I was one of the Americans that gasped when you chunked out the shoulder Instead of keeping it whole (slow smoke that shoulder!) But I was impressed with the final product!
