Greek eggplant and potato stew

    Cooking time: 40’
    4 portions
    Ingredients
    450gr potatoes, in chunks
    250gr eggplants, in chunks
    1 white onion, mashed
    1 leek, thinly chopped
    ¼ bunch of mint
    3 spring onions, thinly chopped
    ½ bunch of parsley
    ¼ bunch of fresh thyme
    100gr tomatoes, mashed
    6 tablespoons extra-virgin olive oil
    1 teaspoon ginger
    1 tablespoon tomato paste
    Himalayan salt
    Freshly ground pepper
    Execution
    • Pre-heat the pot over medium heat and set the audiotherm to ‘steak’.
    • Sauté the onions and leek with the olive oil.
    • Add slowly all the remaining ingredients and stir well.
    • Set the audiotherm for 10’ on the ‘turbo’ sign.
    • When the first red indicator reached the ‘soft’ sign, lower the heat.
    • When the second red indicator reached the ‘turbo’ sign cook for 10’.
    • Wait till all the indicators return to their original state and open the lid.
