It is also important to mention that the shock freezing directly after the production of the 100% Organic Beef Meatballs means that there is actually no difference to what is made on site. It all looks very good. But there is one thing that has caught my attention, why don't they make the mashed potatoes in the giant kitchen, like they do the sauce and the cucumber salad? They could buy the potatoes in traditional potato sacks and cook them in that giant bath tub they have to make the sauce, then mash them using a flour mixer. I think they would save time and money and it would be even more ecological. Greetings from the Basque Country
The organic precooked potatoes packages are way better than you think and save tons of work and equipment. Also fresh mash is always better than reheated mash.
I am of German decent, but have never been there. Would surely live to go sfter watching all this. In America, we do add alot of milk and buttter which makes them fabulous, but fid you notice how many pounds of butter they put in the gravy? I had some lingonberry on some pancakes l had at IHop, l did not care for them, but do love cranberries. 3, the meatballs look so good, l do wish l could have seen them being made as l never have. But hey, there's always IKEA. And the cucumbers salad, l didn't know also that it came without onion. But am willing to try them your way as that was a load of garlic you put in the sauce on them. Still believe they were awsome. My biggest comment, l wish l had one of those spickets for underneath that huge stove that made that gravy. Was great, if l could get to Germany 😊😊😊
I like Ikea meatballs and I like this. They are not better but different. More basic.Every region is a bit different. My balls are also different but they are the best 😊
Oops, no onion in Swedish pickled cucumber traditionally., and no garlic in traditional Swedish cream sauce. Great to see that the size of the meatballs is typically Swedish, and that you serve with raw lingonberries, the best we Swedes know. I will try to have in onions, next time I put in Swedish pickles. And add garlic oil to the cream sauce, you should always be inspired by new food ideas. Mashed potatoes from me:We always have in a lot of butter, more than you think,and warm milk,salt and black pepper, beat ,until it is without lumps, have in more milk until it looks almost too thin,out,let the mashed potatoes swell for about 3-5 minutes in the saucepan on the stove, you will have in a little more milk , Then you have the tastiest mashed potatoes.
7:50 Aagork salad Cucumber /Vinger/Sugar (sometimes salt to taste) Danish. Danes love Their Slightly Picked Red Cabbage and Sliced Red Beets (just in a brine) some like pickled. Kottbullar Similar to Fegadillas (freggies) and then Brune Kartffeln Small potato from the garden (peeled) then fryed in a very hot pan with a slurry of brown sugar (you had to be fast to keep stirring or they would burn) that was more at Christmas We would have a Duck or a Goose (x2 they were small) at Christmas and the Gravy that mom would make from the drippings/ and fat with a little bit of Strawberry jam mixed in 🥰🤩🤗❤🙏 PS: my favorite lunch was Breaded Felt-o-Soul on Rugbrod few slices of Aagork Cucumber and a squeeze of Remoulade open face of course MOM Passed Away at 96 and I sent her Ashes back to Denmark. 🙏 But I still have all her Recipes with me here in Canada. 💕

That's cool that they have a traditional Swedish meal there! That's not what I expected. Tho Swedish meatballs should be made of 50% pork, not all beef and I think they should make them from scratch, not buy them frozen.

@@axellure9168 нет, тефтели - это мясо с крупами, крупнее гораздо, обычно с рисом, но некоторые индивиды кладут туда пшено, манку и прочую вредную ерунду, а аналог шведских мясных шариков - это фрикадельки, но и их, как правило делают в супе, т.е. вареными. Поэтому прямого аналога нет в рф, ну разве что обычные котлеты, но и их делают не так, гораздо крупнее и часто тушат под крышкой, получается отвратительный столовский запах, как был везде при ссср.

I don't want to sound like a hater but I am Swedish and I tried this place once and was quite disappointed. It's like they have taken the IKEA meatballs and tried to made it fancy, but IKEA meatballs are already not close to the "real" homemade version of this dish, so the result is just weird. Will try again soon, maybe they have improved. But honestly it's not a very difficult dish to make so I'm wondering how it's possible to get it so wrong. Sorry Edit: Most probaby it's a "germanified" version of the dish which is why I don't recognise it as authentic. That would explain the fries (would never happen in Sweden). Garlic in the sauce is another thing that absolutely would not happen in Sweden, would be interested in knowing where this idea came from. Again, it's not a difficult dish to make. No reason to complicate it.
Very nice food facilility. But you use a very dangerous cucumber slicing machine. You should use a safety device to push in the cumcumber. And second you place the food container on the floor 4:10 then blend it, while it stands on the floor. I think it's no protocol to put anything containing directly on the floor. You can see how the food container base is 4:23, and you give it a shake and dirt could fall in the food. I have to say that the end result food looks pretty nice, maybe a little grit in the cream sauce ;-)
Thank you for your thoughtful comments.🙏 The cucumber slicer has two quite long filling tubes, you have to put your hand in very deeply and with force to get to the knives. 03:14 Looks more dangerous in the video than it is. ;) You can't get your fingers from the edge down to the knives. The camera perspective (only high-angle shots) is deceptive, the tubes are deeper and narrower than you can see in the video. 03:36 And when he pushes in a new cucumber, he automatically pushes the smaller rest on the bottom down onto the knife. And with the last cucumber he used a corresponding metal bolt to push it down. Not in the video, otherwise it would have been too long. At the point where the container stands on the floor and it mixes 04:10, it must be said that the grid on which it stands was previously sprayed with the water hose. For reasons of video editing, we didn't integrate every single work step, otherwise it would be very boring at times. The first rough cut alone when making the sauce was 40 minutes long. why would they be cheap ingredients? all i m seeing is very professional upscaling of, most-likely traditional, recipes in order to crank out 200, 300 portions a day. i m sure it tastes great. it looks like they are buying good quality ingredients, but in bulk. is the quality worse because it came in bulk?

Traditionally, never garlic, fry the onion in butter not oil, finely chopped parsley for the cucumber and not onions and if possible thinner slices, boiled potatoes or mash but never french fries. Stir-fried lingonberries a big plus!
It’s beautiful and I’m sure delicious but I think those are large serving sizes for me but I live in Florida in The USA so warm weather may slow my appetite absolutely loved the video 👍👍
An sich ein sehr interessantes Video. Ich finde es leider nur sehr schade, dass im Video sehr viele bereits fertige Produkte bzw. vorgeschnittene Produkte verwendet werden. An sich ist es natürlich nicht verwunderlich, bei den Mengen und da es ja auch ein Catering Unternehmen ist, aber selbst das habe ich schon besser gesehen. Es ist nun wirklich nicht schwer, mal ein paar Gemüsezwiebeln zu schälen.😅 Die Sauce empfinde ich persönlich als Enttäuschung, Wasser was mit Gewürzen und angebratenen Zwiebeln aromatisiert wird, mit "Kochcreme" verfeinert, mit Reismehl künstlich angedickt und mit Zuckercouleur gefärbt wird...wirklich sehr traurig. Natürlich muss man immer alle Seiten betrachten, die erhöhten Kosten, Fachkräftemangel, aber ich frage mich halt immer, warum es andere Betriebe/Restaurant mit natürlichen Zutaten und ohne Convenience-Produkten schaffen, Produkte zu kreieren, welche auch den Preis gerechtfertigt sind und ob es manchmal nicht doch eher aus Sparsamkeit und Bequemlichkeit heraus gemacht wird. Dieses Catering Unternehmen hinterlässt bei mir keinen guten Eindruck.

I tried that and it wasnt that good. The Idea and the Components itself are good but the Taste was so/so. Parking is difficult and only digital money is accepted. Apple pay didnt work. It was Outside very cold and the Kitchencrew left the door always open after i closed it.
yeah, put the cold salad on the warm main dish... same with the pile of fries, instead of seperate it at least in two camps, they put it all on the fries... first downvote on this series.

Don't know how popular it is outside of Germany, but I think nutmeg makes mashed potatoes perfect

Der Becher wurde doch noch ausgeleert. Dann wurde er nichts mehr benutzt im Video

Any meatball in any country by any chef is far better than IKEA's frozen meatball inventions.
I don't want to sound like a hater but I am Swedish and I tried this place once and was quite disappointed. It's like they have taken the IKEA meatballs and tried to made it fancy, but IKEA meatballs are already not close to the "real" homemade version of this dish, so the result is just weird. Will try again soon, maybe they have improved. But honestly it's not a very difficult dish to make so I'm wondering how it's possible to get it so wrong. Sorry
Edit: Most probaby it's a "germanified" version of the dish which is why I don't recognise it as authentic. That would explain the fries (would never happen in Sweden). Garlic in the sauce is another thing that absolutely would not happen in Sweden, would be interested in knowing where this idea came from. Again, it's not a difficult dish to make. No reason to complicate it.
Very nice food facilility. But you use a very dangerous cucumber slicing machine. You should use a safety device to push in the cumcumber. And second you place the food container on the floor 4:10 then blend it, while it stands on the floor. I think it's no protocol to put anything containing directly on the floor. You can see how the food container base is 4:23, and you give it a shake and dirt could fall in the food. I have to say that the end result food looks pretty nice, maybe a little grit in the cream sauce ;-)
Thank you for your thoughtful comments.🙏 The cucumber slicer has two quite long filling tubes, you have to put your hand in very deeply and with force to get to the knives. 03:14 Looks more dangerous in the video than it is. ;) You can't get your fingers from the edge down to the knives. The camera perspective (only high-angle shots) is deceptive, the tubes are deeper and narrower than you can see in the video. 03:36 And when he pushes in a new cucumber, he automatically pushes the smaller rest on the bottom down onto the knife. And with the last cucumber he used a corresponding metal bolt to push it down. Not in the video, otherwise it would have been too long.
At the point where the container stands on the floor and it mixes 04:10, it must be said that the grid on which it stands was previously sprayed with the water hose. For reasons of video editing, we didn't integrate every single work step, otherwise it would be very boring at times. The first rough cut alone when making the sauce was 40 minutes long. OK ce sont des boulettes industrielles : plongées dans de la sauce faite avec de la flotte et du colorant. Les pommes de terre en sachet ne sont ni rincées ni égouttées. Wooooah exceptionnel.

why would they be cheap ingredients? all i m seeing is very professional upscaling of, most-likely traditional, recipes in order to crank out 200, 300 portions a day. i m sure it tastes great. it looks like they are buying good quality ingredients, but in bulk. is the quality worse because it came in bulk?

Traditionally, never garlic, fry the onion in butter not oil, finely chopped parsley for the cucumber and not onions and if possible thinner slices, boiled potatoes or mash but never french fries. Stir-fried lingonberries a big plus!

An sich ein sehr interessantes Video. Ich finde es leider nur sehr schade, dass im Video sehr viele bereits fertige Produkte bzw. vorgeschnittene Produkte verwendet werden. An sich ist es natürlich nicht verwunderlich, bei den Mengen und da es ja auch ein Catering Unternehmen ist, aber selbst das habe ich schon besser gesehen. Es ist nun wirklich nicht schwer, mal ein paar Gemüsezwiebeln zu schälen.😅
Die Sauce empfinde ich persönlich als Enttäuschung, Wasser was mit Gewürzen und angebratenen Zwiebeln aromatisiert wird, mit "Kochcreme" verfeinert, mit Reismehl künstlich angedickt und mit Zuckercouleur gefärbt wird...wirklich sehr traurig.
Natürlich muss man immer alle Seiten betrachten, die erhöhten Kosten, Fachkräftemangel, aber ich frage mich halt immer, warum es andere Betriebe/Restaurant mit natürlichen Zutaten und ohne Convenience-Produkten schaffen, Produkte zu kreieren, welche auch den Preis gerechtfertigt sind und ob es manchmal nicht doch eher aus Sparsamkeit und Bequemlichkeit heraus gemacht wird. Dieses Catering Unternehmen hinterlässt bei mir keinen guten Eindruck.

The very poor hygiene standards aside, it really isn't difficult to make food which tastes better than IKEA'S meatballs!

I tried that and it wasnt that good. The Idea and the Components itself are good but the Taste was so/so. Parking is difficult and only digital money is accepted. Apple pay didnt work. It was Outside very cold and the Kitchencrew left the door always open after i closed it.
