I've started coaching a high school level 7v7 team (6 on the field). The tactics I would like them to use have been unfamiliar to them. They have trouble playing In a narrow system and playing those incisive between player through balls.
I decided to place one of the 7 attacking players inside the box, and the goal was to play him the ball, and he play the ball out within two touches. All of my players, no matter the position, played that center pivot. I felt that it was good at helping them find space around that pivot player, and allows the pivot player an opportunity to use his first touch in a way that benefits ball progression. (Something my team has trouble with. My players tend to stop the ball at their feet rather than having a dynamic first touch).
I also tried something where instead of having a pivot player stay inside the box, I had one player run into it to receive the ball, then become the pivot player, and he is allowed to come out the box after playing the ball out.
It's a great drill, I've noticed, for any team. It emphasizes those through balls that are important in attack, and is an exercise for both sides as there is a lot of off the ball movement.

Does one team defend the whole time and then switch or does the defense switch to offense after taking the ball?
The attack and defense changes when the is won by the defending team.

Whats the main goal of this session?
from an attacking POV ,Possession of the football is the main target through giving players an appreciation of spacial awareness, passing lanes/angles and being quick in your tempo of play.
The progression will focus a little more on body shape when receiving the ball with particular attention being paid to scanning before receiving and playing on the half turn to be aware of whats around you.
Defensively it's about keeping shape, closing passing lanes and communication with those defending/pressing with you.
what a bad drill or explanation...whats the purpose of this drill?
my 7 defenders would cover and block only the middle and game over. where are the constraints?
If your defenders are only interested in defending the area award points for a certain amount of passes, this would make them have to engage their opponents. It's up to them to approach the drill with a gameday mentality every session should be able to be game related.
