it is as easy as it looks but look very carefully at the 18 second mark. She reaches forward and with her index and 3rd finger pulls the slider up.

How do I take off the front stroller bar?

Great question! Just look for the circle of stitching on the outside of the stroller seat near the bumper bar, and press in while lifting the handle away from the seat. You'll need to detach both sides of the bumper bar to completely remove.
