  • Welcome to my kitchen! 👩‍🍳 Today, I'm excited to share one of my favorite snacks-Crispy Squares! 😋 These crunchy, golden bites are the perfect mix of flavor and texture, making them a hit for any occasion 🥳. Whether you're looking for a quick tea-time treat or a party snack, this recipe is the perfect choice 🍽️.
    INGREDIENTS FOR THE DOUGH:
    Refined flour (Maida) 1 cup
    Baking soda 1 pinch
    Salt ½ tsp
    Hot oil 1 tbsp
    INGREDIENTS FOR THE STUFFING:
    Boiled and grated potato 1 cup
    Chopped cabbage 2 tbsp
    Chopped carrot 1 tbsp
    Chopped French beans 1 tbsp
    Green chili paste 2 tsp
    Grated ginger 1 tsp
    Chopped coriander 1tbsp
    Red chili powder 1 tsp
    Turmeric powder ¼ tsp
    Asafoetida (hing) ¼ tsp
    Dry mango powder (aamchur)½ tsp
    Chaat masala ½ tsp
    Cumin seeds powder ½ tsp
    Sugar ½ tsp
    Salt as per taste
    Barik sew 2 tbsp
    Finely crushed flattened rice (Poha) ½ cup
    Grated fresh coconut 2 tbsp
    METHOD:
    1) Combine all ingredients for the dough together with a spoon first because of hot oil. Now knead a tight dough with required quantity of water. Cover and keep it aside.
    2) To prepare the stuffing, combine boiled and grated potato, chopped cabbage, chopped carrot, chopped French beans, green chili paste, grated ginger, chopped coriander, red chili powder, turmeric powder, asafetida, dry mango powder, chaat masala, cumin seeds powder, sugar and salt together. Mix well. Add sev and 2 tbsp crushed poha. This mixture should be tight in consistency.
    3) Roll 2 medium thick rotis of the dough prepared earlier. Place them on one above and cut it into square shape. Now we will have two same square shape roti. Prick these rotis. Roast both rotis slightly from both sides.
    4) Prepare a thick paste with 2 tbsp refined flour and water. Apply this paste on both rotis. Spread 1-inch layer of the stuffing on one roti as shown in the video. Place the other roti over it. Press it gently. It will look like a sandwich.
    5) Cut it into 6 or 4 squares as per the size of the roti. Dip it again in refined flour paste and roll it in crushed poha.
    6) Deep fry these square in oil on medium flame till become crispy and golden in colour.
    7) Garnish it with tomato ketchup, grated fresh coconut, chopped coriander, barik sev.
