The right hand sixteenth note in each grouping of "the memorable bit" is accented. It's not always evident that we accented it if you just watch, but if you listen, it's a bit more obvious.

I think at 3:39 that instead of beats 3 and 4 being: eighth eighth diddle diddle accent, I think they play an upbeat tap roll, like: eighth accent diddle diddle eighth. Also at 10:52, I think instead of the last beat being a fivelet, I've noticed they put a little space before the shots, so it can't be a fivelet, and I think it might be a sixteenth note followed by a 4:3 for the shots
You're correct about the upbeat tap 5. The shots are, in fact, written as a 5let, but we just gapped it a bit. Not really a deliberate choice, just how it ended up.
Would love it if you'd include a link to the sheets you use in your videos. I know I could simply take the music from your video and notate it on my Sibelius, but what fun would that be? I'd rather just print it out from your link. Ha! Please Geoff-start including sheets!
