As an amateur wood carver, I love the "swish" sound of the tool as he carves through the wood. This is a beautiful carving done by a pro. It is very obvious that his tools are very sharp. It would be interesting to see how how he keeps them that way. Especially the V tools.
The type of wood he's carving makes a huge difference too. From my own limited experience carving and maintaining sharp tools (though sharp enough to shave intermittent hairs seem dull as dowel rods in comparison to his tools. I've found that carving hard woods like maple (especially like carving maple) or similar types to be less prone to parts cracking off and or chips that split off the piece leaving torn uneven surfaces. Except with dark walnut which splinters easier and you need gloves to brush away chips unless you don't mind lots of tiny flechette like slivers that require cutting out to remove. Red cedar carves well and deep on single strokes best with knives than chisels which can cause parts to splinter or rack that you didn't want to remove. Yellow cedar carves better if it's wetter or greener than if it's drier. Maple carves best using a mallet than freehand and an hold small details very well. Also it carves best with chisels rather than knives
Is Linden wood a very soft wood? Am feeling like Candle Wax, cause you are carving just with your hand pressure but not with any hammering method and tools!

I sold my house that had a great deal to wood work and carvings to a man who happened to be a "flipper". What he did was to strip the house bare paint and make a few changes and sold it for twice what he paid for it.
