It's all about the technique with frying fish. I made a video recently using baking parchment in any old pan. Hope you check that one out

Doesnt basting make the crispy skin soggy again
as this fillet of fish is quite thin the basting was just for a couple of seconds on the skin side. Most of the basting was on the flesh side, the skin was gorgeously crispy still. Also I was basting with fat which shouldn't make it soggy, hope that helps
@@unclemattscookerylessons that is very helpful ty! I did some slmon the other day and was sad when the centre of the skin went soggy... I dno what I did wrong. Hot pan, oiled fish, skin side down till mostly cooked, flipped and then i added some garlic parsley on top and tried to flip it to cook the garlic a little... Maybe that was it? I thought if I put it on ahead of time it would burn the garlic and herbs? :/ I will try this as I want to get some bream :)
