- The Mexican town of Comonfortis a place of history, art and legends. Its cuisine is renowned, as are the salsas made in the molcajete. This pre-Hispanic stone mortar and pestle allows more control over the texture of the salsa.
The crafting process begins by selecting the stone and the carving is done completely by hand. Artisans fashion their own tools.Legend says that the Aztecs prepared the first guacamole with chiles and avocado mashed together in a molcajete.
A single molcajete and pestle can take up to 5 hours to finish. It takes skills to create a symmetrical bowl that won't tip or wobble. The stone's rough surface aids the grinding process.A handcrafted molcajete is often handed down over generations.
