The pigeons flesh is on the breast cage which actually you havent made it through to yet, having just the stuffed rice around the neck and the upper spine, you'll find it around the middle of the stuffings/rice near the belly and just under the wings, all you need to do is to dig in it. Think of it as a baby chicken, and you'll find a tiny weenie bit of flesh on the thighs and the drumsticks too. Glad you're having fun in Egypt, you seem like a nice couple, def genuine.

I live in Germany now, and finding authentic Egyptian food here is tough. No matter how many cuisines I've tried, Egyptian dishes are still my favorite. Seeing that hawawshi reminded me of my school days, grabbing some with my friend after class. Honestly, I’ve eaten at some of the best spots in Egypt, but nothing compares to my mom’s cooking. If I were back in Egypt, I’d invite you to experience real, homemade Egyptian food. I love your videos and how you showcase Egypt to the world!

The Egyptian food at home is really delicious, like the peas casserole with meat that you ate in the video, and the okra casserole with meat as well, macaroni béchamel, molokhia, stuffed rice, breaded chicken, baked potatoes with any kind of meat, and stuffed vegetables of all kinds. What distinguishes most Egyptian food is that our kitchen is almost entirely vegetarian, meaning that it is a standalone dish with meat only as a type of addition that we can do without. Today, my mom made a peas casserole with Egyptian rice. There are many dishes in the Egyptian kitchen that never end, and there are recipes from the days of the ancient Egyptians that we eat to this day, such as besara, taameya, falafel, kahk, feseekh, khubeiza, and many more.❤
22:13 Hi! Egyptian here 😊 So stuffed pigeons are actually a delicacy we enjoy in Egypt. I am sorry you didn't seem to enjoy it much in the restaurant; I believe there might be several reasons for this. Of course, in addition to personal preference, it could have been that the recipe the restaurant used is not the best, or the fact that the pigeon itself might have not had the best quality meat. In all cases, I promise you pigeons are a rather incredible dish we have in our cuisine. In fact, in Upper Egypt, we stuff them with Freekeh instead of rice which (to me at least) is more enjoyable. To answer your question, as you can clearly see pigeons are small birds and they are easy to stuff. Not just that, but our cuisine is renowned for stuffing a variety of things; vegetables and birds! We actually stuff chicken too! We stuff intestines - known as mumbar. We stuff ducks as well (but with vegetables, sometimes oranges and things such as liver). We also stuff vegetables like aubergines, courgettes, cabbage, the list could go on forever. So you see, it's the concept of stuffing our food and our unique cooking techniques and style rather than it being uniquely the pigeon itself. In fact, some people do cut it up and grill it the same way they would a chicken. But since it's so small, it tends to be a bit un satiating and stuffing it makes it more satisfying As an Upper Egyptian, I would love to invite such a lovely couple over to the south and hopefully have you try some Upper Egyptian home cooked meals and perhaps change your opinion on the pigeons or maybe show you various other dishes we eat. Other than that, I hope you enjoyed your time in Egypt and that you would visit us again in the future.

the "hawawshi" dish is definitely heavy as a street food cause the vendor drench it in lamb fat whilst grilling it so it's always greasy when getting it from street vendors but they're a lot better at a restaurant and even better when made at home by the mama's hands actually i think most of the egyptian food is way better at home cause the real egyptian food is at it's core homey and cozy, vegetable and beef stews chicken casseroles minced beef filled pastries
That is an amazing video as usual. keep up the good work. I personally like to eat Shish Tawook which is the chicken that you ate, it is thigh meat as Shannon said. there is no barbecue sauce it is just a natural seasoning and the charcoal it is made on. False pigeons differ from real pigeons, but with the same mixture and internal filling. It is one of the Egyptian dishes that is easy to prepare and resembles real pigeons. @Alan_and_Shannon you were nearly there. if you have removed the rice you would find the meat the blackish thing within the rice of pigeon is its liver (but heated liver in water that's other than fried liver)
They boil the pigeon in water then they fill it with rice then they boil it to give it a crust you break the bones and remove them with your hands and some people even eat the bones ( 5-10%) I personally don't eat the bones , and I don't like the rice I only love the meat and the skin
