@@adde9506 takes roughly 45 minutes to cook about 10kg batch, pouring and colouring, whipping takes about 20-30 minutes, the build takes between 15 minutes and an hour depending on complexity, and then extrusion takes about 15 minutes, chopping and sorting can do a 10 kg batch in 30 minutes and packing into bags about an hour. you cant work with the sugar for too long or else it starts to crystallise again if you reheat it too much.

we have this in singapore as well under the brand 'Sticky'! it's a hard candy that takes a bit of time to dissolve, even the taffy part. often sold in small packets because it does hurt your mouth after a while haha they do have a lot of flavours and i think the sours are the best (: hope you get to try it someday or get your name on one!

Hi! In the UK this is called rock and I can definitely assure you that it NOT chewy. It's a hard candy and tastes a bit like the flavour you choose with a little mint. It only really becomes chewy when you've had it in your mouth for a good minute or so.
This is a really cool and informative video. I regret not trying to find a Japanese candy shop when I was over there. There's a lot to that beautiful country that I did not see... Next time, for sure!

I watched a candy channel make candy and it said that their table (that looks similar to the one they’re using, including the tools) cooled the candy while they worked on it. And it looked like they mostly used tools until they cut the candy apart, and as far as I could see they didn’t touch the liquidy candy parts with their hands, only the solid ones. So maybe the candy was cool enough for them to work with it safely but warm enough to be malleable?
@@rhinopoley when its this pliable, its around 130°f-140°f and dropping steadily because its on a cooling table. That's hot enough to be *hot* but not hot enough to really hurt you. It does take getting used to

At that stage, it's not heat enough to hurt them. It's just super warm.
