What is "Healthy Soil"

When you look at the soil on a "conventional" farm, it's pale and doesn't have much of an aroma. When you see the soil on a farm that uses regenerative practices, says soil scientist Ray Archuleta, it "looks like chocolate cake. ... It has an elegance, it has a smell to it. I use the distinct difference between the two to get farmers to understand." Soil health is critical -- 50% of Earth's biodiversity is in the soil and "the reason we missed it [is] we could never see it."
