You can easily preserve your summer squash for later use. Wash, slice squash, stuff into canning jar leaving 1" at top, bring 16 qts water, 1 cup white vinegar, 1 Tablespoon Canning Salt to a boil and add to jars leaving 1" at top, wipe rims with vinegar and put on hot lid and finger tight ring. Boil 10 minutes 1" over top of jars. Makes 7 qts Squash removed later can be rinsed and patted dry to bread for fried squash or use in saute or casserole.
