I've made aquafaba mayo before but never tried it with tofu! I'll have to try this soon, I enjoy making my own silken tofu and it will be perfect for this recipe

Thank you! I've been wanting vinegar-free vegan mayo, and a lot of recipes seem...well...they seem fine, but the simplicity of the ingredients are countered by the difficulty of obtaining them.
Example: "This recipe is so awesome, and it only requires 3 ingredients! 3 hairs of a polka-dotted pony's tail, the wind of the Appalachian mountain at noonday, and a pinch of sea salt. Also, make sure to use the ancient Mayan technique of wind whisking, or else this recipe will not work. And there we go! Wasn't that simple??"

How about a recipe without tofu???
Great question! If you would rather not use silken tofu, you can try 1/2 cup soy milk and increase the oil to one cup instead. We like this version of mayo too, it will have a better flavor, but more oil.
