I love savory recipes! So I ran to the supermarket to get pine nuts. I’m so glad I did because I don’t think it would’ve tasted as good with blanched almond. Albert, I do appreciate you offering substitutes but pine nuts are essential here. It elevated the flavors to a higher level. I’m sure the salad origin is a humble one but I can see it being served at five stars restaurants. Also, I thought you forgot the lemon juice so I added some and it didn’t taste as good. So thumbs up 👍🏻 thank you 😊
Fresh zucchini are coming to farmers markets here in Vancouver. Since I have several beautiful zucchinis in my market basket, this recipe will be part of today's meal prep. Looks simple!

Oh, darn! I have no raisins or pine nuts and I literally just ordered my groceries 10 minutes ago. I ordered zucchini, but if I’d seen this, I’d have added the other things to make this today. Next time!! It looks really delicious and, as you said, exotic. Out of the ordinary!

Reminds me I need to get pine nuts the next time I go to the market and hopefully my garden zucchini will be ready for that. But I am a raisin free house since one dropped raisin resulted in over a thousand dollar vet bill. Didn’t know one raisin can poison a small dog. She is fine after four days in the hospital. That does look delicious. I think I would use cranberries as I'm not a huge fan of raisins. I bet the lemon zest gives it a lovely zing.
Looks great. Since I am in no way a pro slicer, I would probably have to add 5 to 10 minutes to my prep time. 🙂
I would add a splash of lemon juice in addition to the lemon rind.

FYI: Zucchini are called courgette in British English. Personally, I would not use EVOO for this; a good quality regular olive oil should be fine. Speaking as a European, EVOO is a seasoning, similar to the way sesame oil is a seasoning in Asian food, not a cooking oil.
Get off your high horse courgette guy! why would he call it that if he’s in Spain? Besides the word courgette is borrowed from the French. If you want to correct somebody, do your research 🧐 or just shut up because you’re actually criticizing his cultural cuisine. Albert said the recipe is regional of Andalucía Spain!
I don't think he was on his high horse, merely pointing out to British viewers that zucchini is the same as a courgette. By the way the Spanish word is calabacín.
