Ashish ji it would be better if you cook the tender parts of mutton later as adding it same time the delicate parts like kidney, liver etc mix up with gravy although you already mentioned that some parts add good taste to gravy but in our Punjabi style the cooks add these parts while adding water for gravy so that one can has taste these tender parts separately.

It is copper utensil called lagan. It has tin coating inside called kalai in local language. You can find it chawari bazaar market if you are in Delhi.

One question chef, when cooking time is different for different ingredients like trotters and liver , why cook together
I know but the recipe is like that. I followed the traditional way. If you want to enhance, you can pressure cook trotters and add at the frying stage but don't forget to add it's(trotters) stock later at the time of adding water to make gravy.
