Tip for ppl like me who don't like onions but they obviously gotta go in for the taste: Processing the onions will make them come through VERY strong since you extended the surface of it by breaking it down. Hence why I went back to just cutting them very small lmao. Like if you just have the texture problem, go ahead with the processor but if you don't want the onion taste too strong, try to use a bit less onion that you normally would to balance things out. Also, that's just my croatian take on it but a bit of paprika powder (or that and vegeta) does wonders for the sauce! I cook it traditionally but I like to experiment and bit soy sauce gives a good umami too if you end up finding the sauce needs "something" more. But that with the paprika is something one of my aunts did and I couldn't pinpoint why it tasted so rustic until I asked her and she used smoked paprika powder! Which btw also helps a lot with getting that smokey taste in vegan Bolognese! (just for context, paprika powder/vegeta goes in a lot of our dishes lol that's why I said croatian take)
The gnocchi and Bolognese really look delicious. Recently I watched a video about pappardelle pasta. Afterwards I went down a rabbit hole of the difference between tagliatelle and pappardelle. And the difference between Bolognese and ragu. But I've really been craving some bolognese with pappardelle. I also like the way you added everything to the food processor as well.
