Hello everyone! I hope you enjoyed this easy cornchaff recipe. Cornchaff is a Cameroonian dish made with boiled corn, boiled beans, palm oils, country onions and other ingridients. The dish is very easy to make because all you do is add all your ingredients in the beginning then cover the pot and let it cook for about 15-20 minutes on medium to low heat. This is a beginners friendly recipe, so if you’ve never made cornchaff before, don’t worry. This recipe is the perfect guide for you to cook it like a pro! Ingredients
Boiled Corn 3 ½ cups
Boiled Beans 4 cups
Palm oil 1 ½ cup
Country onions ( Rondelles) 1 ½ Teaspoons
Smoked fish - Any amount you want
Crayfish 2 ½ Tablespoons
Onions ¼ of a large onion
Water 3 cups
Garlic 3 cloves
Ginger ½ a thump size
Beef bouillon 1 Teaspoon. You can use maggie instead.
Salt 1 Teaspoon. Make sure you start off small then taste not to add too much.
Green onions 2
Celery

Does anyone know where I can find crayfish powder or what a good substitute would be? I’m not entirely sure that we have it where I live😫
You need to find a West African Market, You will find this in any of those groceries that supply African products or you can dry out shrimp and crawfish and make it your self. We add red pepper flakes into ours.

Corn and beans for me have different cook times so I don’t boil them together. You can also mix both if that’s what works for you!

Hey sis, thank you so much for watching my videos! I use either choice superior palm oil or sunrise sabouya international palm oil. I get it from the international Asian stores or African stores.

As a Louisiana creole I always joke with my Cameroon friends that our foods and Cameroonian are similar & this is similar to our Maque Choux. Only thing, ours typically has no fish or meat is used and not so watery but each Maque Choux can be different than the next.
We like to take sweet corn and scrape it from the stock and cook it on low heat with pork or beef fat as stock or base. We use peppercron black or white if you want to keep it clean & not dirty. My grandparents would throw in okra and maybe some beans. I like milk, and tomate puree personally.
Cameroonian dishes are the best and very tasty foods for west central Africa I miss a lot of that foods.You should do corn koki which are similar to tamales here in the Americas.
Oh wow! It’s so interesting how similar our dishes really are. And growing up in the village, my grand ma always made it without fish, lol but I’m so extra. Normally the corn we used wasn’t sweet. But it was dry corn which always took hours to cook and I hated 😂 we added wood ash to it but I can’t remember if it was to hasten the cooking process or to clean the corn. We used black or red beans depending on which was available, but I like black beans better. Also once the cornchaff cools down, the consistency becomes thicker. I definitely cannot wait to visit Louisiana. I’ve heard people in Louisiana love to really really season their food and it excites me so much to visit!! And yes our dishes are the best and very tasty indeed. I’ll definitely make a koki corn recipe!
@@stephanieasoh yes our cooking styles are similar but Cameroon has a lot more dishes and cooks food much better. Also the seasoning that's in W.central are very ...African ;) ( alligator bush pepper, njasang, etc.....)
Pepe Fish or Pepe Goat with brown peanut sauce gravy is one of my favorites.
St Tropez in Yaounde is a great food spot with cheap dishes that are extremely nice. i don't think I ever had anything that was less than 5 stars in qualiy..
