- Pyaz Kachori is a recipe originated & famous in Jodhpur and widely savored in Rajasthan as breakfast (Naashta).
** Please note that tsp represents teaspoon &
1 tbsp represents 1 table spoon
Ingredients: Dry Roast masala
1. 1 tbsp coriander seeds
2. 1 tsp fennel seeds
3. 1 tsp cumin seeds
For Kachori Filling
1. 4 large onions chopped
2. 2 medium sized boiled potato
3. 3-4 chopped green chillies
4. 1 tsp grated ginger
5. Salt (Namak) as per taste
6. Turmeri powder (Haldi powder) 1/4 tsp
7. Kasmiri red chilli powder 1 tsp
8. Bengal gram flour (Besan)- 2 tbsp
9. 1 tsp dry mango powder (Amchoor powder)
10. Garam masala powder 1 tsp
11. Sugar 1 tsp
12. Coriander leaves (Dhania patta)- 2tbsp
13. Lemon juice (Nimbu Ras) 1 tsp
For Dough
All purpose flour 2 cups (500 gms)
Add a pinch of salt
Carom seeds ( Ajwain) 1/4 tsp
Refined oil/Ghee 1/4 cup ( must)
Sabzi (vegetable gravy)
Potato (boiled) 3 medium sized
2 medium sized tomato ( Paste)
Red chilli 2 no.s
Bay leave ( Tejpatta) 1 no.
Green cardamom 2 no.s
Cloves 4 no.s
Cumin seeds 1 tsp
Hing ( Asafoetida) 1/4 tsp
Green chillie 3 no.s

Corn flour 1 tsp
Salt as per taste
