You’ll do well!!! It’s all about time to cook. If it hits the temperature early just wrap it in aluminum foil and throw it in a cooler that is line with some beach towels. It will stay hour for hours! Let us know how it turns out!
FYI I never soaked wood chips. Been doing this 4 years. You get a helluva lot more smoke with dry chips, also need to replenish them more too, but so what. You want smoke and that will give you more bark, which is lacking here. Bark=Flavor.
I’m going to be that guy. Everyone needs a critic in the comments lol. Don’t marinade them, wrap them around 160, and those had no bark whatsoever! Why didn’t we get to see you shred it? Would have been nice to see the final product.

I bought a smoke tube for my electric smoker,works fantastic I get about 5 or 6 hours of smoke from it.
I’ll look that up. How does it fit in the tray pan?

For how long you soak those chips before put them in the smoker?
I soak them for about an hour. It seems to work
How long does it take your smoker to pre-heat?
Scott - this one takes about 15 minutes on an average day. This is also with cold water in the water pan. So not to bad!
