Fast Sautéed Spring Mix
Makes about 2 Servings
1 (5 oz) tub Spring Mix*
Garlic powder**
Salt and pepper
1/2 Tbsp extra virgin olive oil
1 or 2 lemon wedges, or 2 teaspoons vinegar of choice
Rinse the Spring mix and spin it in a salad spinner to remove excess water. If you don’t have a spinner, place the rinsed mix in a colander and allow it to drain well. Do not dry the greens with a towel. Do not skip this step, because the little bit of water on the greens helps them to cook.
Transfer the Spring mix to a bowl and sprinkle with garlic powder, salt and pepper, all to taste; toss it to disburse the seasonings. Heat a skillet over medium heat. Add oil and allow it to heat briefly. Add Spring mix and sauté it for about 1 minute, just until it starts to wilt. Remove from heat and drizzle with lemon juice or vinegar. Enjoy!
*This recipe can EASILY be increased to using any amount of Spring Mix that you want. Just be sure your pan is big enough to handle the fresh greens at the beginning.
**If you prefer to use fresh garlic, omit the garlic powder. Chop garlic cloves (any amount you want) and place them in the skillet immediately before adding the greens. Proceed with instructions from there. - Навчання та стиль

Thank you so much, Judi! I bought some spring mix because I hadn’t ate them for years and I remembered why I didn’t eat them lol. I don’t really like the taste but I don’t want to toss them, this is a great way to change up the flavor a bit and still eat healthy :)

Thank you for this. While I agree with you that this holds up pretty well, the container of Spring Mix that we buy is so large that with just the two of us, I find it difficult to eat completely before it starts to go bad. This is exactly the way that I most often cook fresh spinach and I thought this might work. Now with your video I can be assured. Thanks again.

Hi Judi. Can you saute other types of lettuce, such as romaine, for instance?
Hi Kate! Thanks for watching and asking your question! Yes, lettuce can be sauteed too. Since full-grow lettuce is crispier than the baby greens, they may cook up a little differently, like needing just a little more time to soften. Try it sometime and let us know how it comes out :)

Do you think we lose any of the nutrients when we sauté them?
Hi Dorette! Cooking in any way whatsoever has the potential to reduce some nutrients (especially water-soluble vitamins). However, some nutrients (especially fat-soluble nutrients) can also be absorbed and utilized better after being cooked. The key with cooking greens like Spring Mix while preserving as many nutrients as possible is to cook them quickly in as little liquid as possible. Then consume the liquid if you want (in the South, it's called "pot liquor" and usually consumed with the meal). I can assume that Spring Mix is most often consumed raw, but some people prefer to cook them, and this gives a quick and easy way to do that, and it's a way that preserves as many nutrients as possible. Am i the only one 🤔 who didn't know you can cook spring mix. In my mind its like cooked lettuce inside my burgers 🍔 i disliked that look and taste 😆 BUT TY FOR THIS IDEA

Organic coconut oil is the best oil to cook with. Olive oil is not good for cooking.
