For my part, I grew up listening to "chip" music in my videogames, and this kind of music evokes strong nostalgia for me - as well as sounding awesome in it's own right. If it's not your thing, it's not your thing. Your lack of enjoyment won't affect my enjoyment of it in the slightest.
The only way to understand would be to try and create some chip yourself. Just because it's "not real" doesn't mean it's easy and requires no skill. Infact, getting a "good" sound out of a two decade old synth chip is every bit as hard as playing a "real" instrument and deserves respect.
