For those, new to cooking, who were wondering what a half pound of bacon is, it's the amount left after cooking 1 pound of bacon and sampling for quality control.

I know, I cried when I saw that. In every single video where he's called to drain the bacon fat, I never have, and not once has it resulted in a dish being too runny or greasy.
@@WobblesandBean But you need some bacon fat in a jar.
I only keep pure bacon grease. After you've used it to cook something else it'll pick up the other flavors which will not necessarily be desirable for the next thing you cook. So I endorse his discarding the excess bacon fat in this case.

So good Chef John; at the point where you add the cream, instead pour in your favorite corn bread batter, bake til golden brown, that's the way I do it for "Mexican Corn Bread"

I think I'd like to try it that way. My Hispanic students got me to try mayo on roasted corn (along with chili powder and cayenne), and that turned out great.
I think it depends on the ratio of mayo to condensed milk. It would be very rich but not necessarily in a bad way. I think it would be worth a try!
If you try the original thing in Korea you will realize it does not need a rescue of any shape or form....
The Mayo and sweetened condensed milk version is on point. I haven't tried it with heavy cream.

The 2 best cheese combos for this dish would be provolone and swiss gruyere, my fave is the swiss gruyere, a little pricy , but well worth it, it is delicious.
Put in some rotisserie chicken and it would be the bomb
Great idea, Plus adding the chix would make it more of an entree, as without the chix chef john called it a side dish, but the chix would make it much more flavorful and filling my friend,

Chef John.. i stumbled on to your videos in 2019, but over the last year, your videos became my daily moment of zen. Some days, i would need several moments of zen, so i would follow you down the rabbit hole of mouth-watering recipe videos. Your pleasant, calming food videos helped me forget about how bad things were this year.. even for just a couple minutes a day. My husband and I made it through. We were both vaccinated and to celebrate, i made 4 of your recipes, a pork loin, with asparagus, ba'corn, and a boston cream pie for dessert. Im happy to say that all 4 were homeruns.. a grand slam if you will.. but this ba'corn dish was unbelievably delicious. Thank you for getting me through 2020 and making me a better cook in the process.
Sure, I guess you can soak up that fat with a towel. Or you can use bread, and have a tasty snack while you cook.

As a child my mother would make fried corn....bacon....sliced tomatoes...fried potatoes with onions..cornbread. Best meal ever!!!!

Just made this for Christmas morning 2020 and every.single.person LOVED it. Before the meal was finished there were already a few serving ideas for when I make this again:
-Served atop rice; this suggestion came from my granddaughter, who exclaimed “This tastes like corn chowder and is now my most favorite dish!”
-Served with corn chips, like a dip.
-Funneled down your throat; this was unanimously agreed upon by everyone who loved ba’corn!

This recipe needs some corn bread, REAL corn bread. Not that sweet twinky-tasting junk. Savory rules. I'm thinking corn bread with rosemary ground up in it. The possibilties are endless.
Made this a couple times over the summer. Absolutely loved it. Bringing it to family Thanksgiving to introduce something new, almost vegan, to the feast 🙂

Mushroom actually might be pretty tasty. Or a firm tofu (probably marinated) that you crisp up and add back in before baking.
Add some smoked paprika and soy sauce too.

There is vegetarian bacon. You are covered, if you use that.

I guess if you wanted to make this vegetarian, you could try some sliced mushroom which you brown thoroughly in butter, possibly with some smoked paprika to get a hint of that bacony flavor back?
Also, just thinking about the original version with the sweetened condensed milk and mayo is clotting half my arteries. @~@

What if someone were to take out the heavy cream and the jalapeno and instead used cream cheese and stuffed the mixture into a jalapeno, then breaded and fried them.

If you sub the corn for roasted hominy and the jalapeno for ancho and the cream for a pound of butter, this recipe is called a Brown Ranch Baker. A once powerful pig farm in Texas. It was a dish brought to annual reunions in a Miraflores Park.

I would have a couple off beaten eggs to the cream so that it makes corn Pudding, corn Casserole, corn Custard, or corn Souffle your choice of term. Put the term of choice as a search on UA-cam. They are all are delicious. Some add premade corn bread mixture to recipe, also cream style corn.
Just made this with spinach and onions and had it with some ciabatta bread .

add a cup of flour and 1/2 a cup of cornmeal and you would have some insane cornbread.
I make a similar version of this but I put them into Individual ramekins before the oven. Everyone gets their own little crusty bowl.
Am I weird for saying that's bot enough corn for me? lol. Like I feel like I need more corn with how much bacon and onion is in it. And Monterey jack is soooooooo much better than mozzarella .
