- Healthy Panjiri Laddu helpful in overcoming post delivery weakness. Can be consumed by men, women and children above 6 yrs but children should be given in lesser quantity. Never use during pregnancy and also not be consumed in large quantity. Take only half a laddu daily. For children 6-12 yrs only 1/4th laddu is enough occasionally.

Ingredients:
Dried Figs/Sukhe Anjeer - 100 grms
Dry Coconut/Khopra/Sukha Nariyal - 100 grms
Dried Dates/Sukhe Khajoor - 100 grms
Clarified Butter/Pure Ghee - 200 grms
Fox Nuts/Lotus Seeds/Phool Makhana - 50 grms
Edible Gum/Gondh - 50 grms
Kangi Ke Beej - 50 grms
Flame of the forest/Kamarkas/Bengal kino
Hydrophilia/ Taal makhana
Indian Ginseng/ Ashwagandha - few sticks
Almonds/Badam - 100 grms
Cashews/Kaju - 100 grms
Pistachios/Piste - 100 grms
Walnuts/Akhrot - 50-100 grms
Watermelon seeds?tarbooz ke beej - 50 grms
Melon/Cantaloupe seeds/Kharbooz ke beej - 50 grms
Raisins/Kishmish - 50 grms
Semolina/Rawa - 250 grms
Honey/Shahed - 1 1/2 cup (using 200 ml cup)
Cardamom/Elaichi Powder - 2 tsp
Procedure:
1. Cut dried Figs into small pieces.
2. Grate or Grind Dry Coconut.
3. Grind or cut Dried Dates.
4. Add 2 tbsp Clarified Butter/Pure Ghee to a pan. Do not use Dalda/Calrified Butter made from hydrogenated oil.
5. Add Fox nuts/Lotus seeds and semi-fry till golden brown. Remove from the pan.
6. Add 2 tbsp Clarified Butter/Pure Ghee to the pan.
7. Add Edible Gum/Gondh. Semi-fry till they fluff up and remove from the pan. Add to the same bowl as fox nuts.
8. Wipe the burnt ghee/clarified butter from the pan. Roast for few seconds and remove.
9. Add all these to a single bowl to be ground later. Kangi ke beej treats aneamia and Bengal Kino strengthens the back.
10. Add Ashwagandha/Indian Ginseng to this bowl.
11. Add 2 tbsp Clarified Butter/Asli ghee to the pan.
12. Add Almonds. Semi-fry the almonds till brown but do not burn. Remove in a separate plate. Fat in almonds is a healthy fat. Almonds strengthen the eyes, brain and body. Good for skin health as it contains Vitamin E.
13. Add Cashews to the remaining Clarified Butter. Semi-fry the cashews till light brown. Remove all these dry fruits in the same plate. Cashews contain magnesium that helps in absorption of Calcium. Cashews strengthens the bones, teeth and body
14. Add Pistachios into the remaining Clarified Butter. Semi-fry and remove the Pistachios. Pistachios contain Proteins and Nutrients. Pistachios are beneficial for eyes, skin and gut health
15. Add Walnuts to the remaining Clarified Butter. Semi-fry the walnuts and remove and add to the same plate with other dry fruits.
16. Walnuts strengthen the brain. They are also heart healthy. Since a good amount of clarified butter is used in this recipe, this is not good for patients suffering from high cholestrol.
17. Add Watermelon and Melon/Cantaloupe seeds. Semi-fry the seeds and remove from the pan. Add to the plate.
18. These seeds strengthen the bones and treats anaemia.They are also beneficial for skin, hair and eye health.
19. Add Raisins to the remaining clarified butter. When the raisins fluff up, remove in a separate bowl as these does not require grinding.
20. A good amount of figs and dates are used here, therefore amount of raisins can just be 50 grms. Raisins treats anaemia and makes the skin sparkling.
21. Add 2 tbsp clarified butter to the pan.
22. Add Semolina/Rawa to the pan.
23. Semi-fry Semolina on medium to low flame till golden brown. Remove Semolina into a separate plate as this does not require grinding
24. Usually Wheat Flour is used instead of Rawa. But I use Semolina for crunchy laddus. You can also use wheat flour instead of semolina.
25. Firstly, grind all the ingredients removed in a bowl, ie Fox Nuts, etc into a powder.
26. Add this powder to a large bowl.
27. Grind dry fruits removed in a plate in another batch. Grind in two rounds.
28. Add chopped Figs to this powder.
29. Add ground Dates, grated Coconut and Semi-fried Semolina. Mix well.
30. Gradually add honey. I have used total 1 1/2 cups honey in this recipe.
31. When the mixture gets ready for moulding into laddus, stop adding honey.
32. If Jaggery is used in place of honey, crush or grind jaggery into a powder and add to the mixture.
33. If Sugar is an option, add Powdered Sugar and Clarified Butter as per the requirement.
34. Add 2 tsp Cardamom Powder to the mixture.
35. Mix well and mold into laddus.
Panjeri Laddus are ready. Enjoy this winter!
