Mississippi Mud Cake
1 CUP ROOM TEMPERATURE BUTTER (SALTED)
2 CUPS GRANULATED SUGAR
4 LARGE EGGS
1/3 CUP OF COCOA (HEAPING)
1 ½ CUPS SELF-RISING FLOUR
1 CUP CHOPPED PECANS
1 TSP. VANILLA
1 CUP FLAKED COCONUT (OPTIONAL)
1 SMALL PACK OF MINIATURE MARSHMALLOWS OR 8 OZ. MARSHMALLOW CREAM
CHOCOLATE ICING (RECIPE BELOW)
PREHEAT THE OVEN TO 350 DEGREES.
Using an electric mixer cream butter and sugar and mix well. Now add eggs one at a time mixing well after each addition. Add cocoa and vanilla flavoring and mix well. Add flour and mix for 2 minutes on medium speed. Mix in nuts. Pour into well-greased and floured 13x9 sheet pan. Bake until set about 40 minutes. Watch close at end and take out when toothpick comes out clean. When cake is done, take out of oven and sprinkle miniature marshmallows on top (if using marshmallow cream, spread it on top instead of using marshmallows.) Very, very moist cake layers! Have chocolate icing made and ready when cake comes out of oven.
CHOCOLATE ICING: Mix: ½ stick of butter melted, 1/3 cup evaporated milk, 1/3 cup cocoa, and 1 lb. powdered sugar. Mix well then add 1 cup chopped pecans. Spread on top of cake over the marshmallows! ENJOY Y’ALL!!

I've made this cake for years. But when my kids were little and I was working full time, I started using walnut brownie mix for the cake and ready made chocolate icing. I put the marshmallows on and put the cake back in the oven till they melted and began to brown and then cooled the whole thing before putting on the icing with more nuts sprinkled on top. Bet yours tastes so much better but it was quick and easy for a busy mom. Never get enough of your cooking, it reminds me of my grandma's recipes and warm memories. Love you Tammy and you are just as beautiful without the lipstick. Thank you for all the joy you give us all.
U make this look so easy! My new daughter n law had never heard of one! Can u imagine? I grew up on the mighty Mississippi River! She had never even seen the River! So I made her this very special cake, of course! When I finished, I told her that was the last one I was ever making! I was give out!! That was 16 yrs ago! Now, u r making me want to try again!

My Grandmother would make this but we had the coconut in it as well...I still make it to this day. She would make it on my Birthday. She got it from her church cook book and the person who submitted it was my kinder-garden teacher. I'm 53 years old now and and made sure to keep the recipe for all these years, crazy how time flies...
The first time I had this I was about 15 years old. Some ladies from our Church in Oklahoma always went to church camp with us to cook for our cabin. Some of the ladies that went also cooked for our public school there in our small town in Oklahoma. We always called them the lunch ladies. (LOL) They made this for one of our deserts for our meal at Falls Creek Church camp in Davis Oklahoma. I put the first bite in my mouth and I was in heaven. It was soooo good. Every time I hear the word Mississippi Mud Cake that memory hits my mind. Love it. Thanks for the recipe.

We made this tonight with the small marshmallows(melted in the microwave) & it was great! We used applesauce instead of eggs(not an egg fan). This was a GREAT recipe!

Wonderful chocolate! This sounds like a similar cake that my mother used to make. It was called Heavenly Hash Cake. It had marshmallows and nuts on the top with the fudge poured over it. The cake part was more like brownies than cake. Very rich and good!

My absolute favorite cake!
You made the MS Mud Cake! Thanks Tammie. My family LOVES this cake. The only difference in the way my mama makes it is we use 1 cup of oil instead of butter in the cake batter and 1/4 cup less sugar. We also shift the powdered sugar in the icing. Anyway, this made my day. I so enjoyed watching you make this. God bless!
After the cake bakes, and spreading the marshmallows/ cream, I would place it in the fridge just for it to set up a bit. Then spread the frosting on top. I like the swirling effect though. My daughter just loves this!!
It’s prettier with the miniature marshmallows. You put them on as soon as you take the cake out of the oven and they slightly melt. Then pour on the icing. So good!

Marshmallow fluff is not the same. It’s much more loose than marshmallows and sweeter. I would spread the frosting first and then add the real marshmallow on top
But don't you want the marshmallows to melt On The cake first

Back in the 1970's when I made Mississippi Mud Cake, after frosting the cake with marshmallow and chocolate, I would put it under the oven broiler for about 4-5 minutes. This would toast the marshmallow and "set" the chocolate frosting. We thought this was yummy.

I always thought the name meant the river and not the state, so the color was where the name came from! Looks tasty, although I have NEVER reduced the amount of pecans in a recipe, ever! Ty.
Never knew the Mississippi came from unless it is popular there. But it is a Texas favorite too. 😊

@@gwenhafford4112 The Texas Tornado Cake is made with fruit cocktail and a German chocolate cake type icing......coconut/pecan. I make the Earthquake Cake recipe and call it my Texas Tornado Cake. We had family here in Texas that were hurt when a tornado swept over their mobile home. They were getting ready for church. Their concrete front steps with a potted plant on it was the only untouched thing. So to me I use the Earthquake recipe. We call the one with the fruit, a fruit cocktail cake. 😂. It is good. Guess wherever you are from make the name and type of cake. Try the Earthquake Cake. It is very good and looks like a tornado hit it. 🙂

@@sheryladams1964 I’m so sorry to hear about your church friends. I was born & raised in Florida and lived through a lot of hurricanes, but at least we have advanced warnings. Tornadoes have always terrified me because they are so sudden and unpredictable. Thanks for telling me about the recipes. 🤗 I like your cake names better!

You think yours was sweet? Miss Phyllis Stokes' video of same recipe popped up after yours and she put TWO 7 oz. jars of marshmallow creme and the mini-marshmallows on top! She cut small pieces because she said it was "oh, so rich"! She said that layer of marshmallow creme was her favorite part.

I am reducing the sugar in the cake cuz I don't like overly sweet desserts, I'm using marshmallows instead of the fluff because it is sweeter

This Mississippi Mud Cake recipe looks so delicious Ms. Tammy.
I GREW UP USING CHOCOLATE CHIPS AND MARSHMALLOWS.
When I was growing up in the 50’s and 60’s I didn’t know there was any other flour than White Lily All Purpose.
My recipe called for putting the frosting on first then top with the marshmallows and put under the broiler to melt .
THAT'S what my revision of Mom's looks like... ooey gooey. Except I use brownie mixes, because I did not know how to mix my own. I learned marshmallow spread was easier too. Thanks, Tammy. Looks wonderful!!

Tammy, since Chris likes lots of chocolate, Hersheys has the dark cocoa, sure you have seen in the market. I love dark dark chocolate and love it. Tammy, I know you must know this, but if you would use a very hot knife when cutting a gooey cake, (just hold knife under faucet hot water) you would get a much better looking result.
I made your chocolate chip cookies yesterday! I had a quick question. They didn’t end up thin like yours did. They were a tad bit thicker and they didn’t spread out as much. I was just curious if you had any idea what I did wrong? They were very yummy. I realized that my margarine sticks were not room temp and didn’t know if that could have been why. I am trying to get better at making them because my sons love cookies! Thank you
You may have used self rising flour or not enough butter of shortening
