Some of my favorites:
- NFS Most Wanted's dynamic cop chase music
- StarCraft Terran music fucking rocks
- Rimworld is more endlessly replayable space cowboy
- The early 2000s Harry Potter games were not objectively great games, but had incredible soundtracks even outside of nostalgia
I'd argue both Half-Life 1 and 2 is a good contender for mixing music and immersion, using it for intense situations or to add to the ambiance by being more thematically atmospheric.
Big fan of the half life ambient pieces, as well as the more action heavy pieces
