Years ago, when I had like 22 people over for Thanksgiving, I made an oyster stuffing (inside the bird). I also served a drier dressing on the side for my Idaho family who would run screaming at the idea of oysters in their stuffing. The oyster stuffing was utterly divine.

Chef John, I take cold leftover stuffing with shredded turkey in it and form it unto a round with a cookie cutter. Pan fry in olive oil and top with a poached egg and hollandaise. It's really yummy.

We used a piping bag to stuff the stuffin muffins. A piping bag made the stuffin of the stuffin muffins much easier. We are stoked to bakes these up tmrw. Thnx Chef John
I quit gluten a few years ago (health reasons), but if ever I were tempted to eat some, you just did it :P Those are the most amazing way to serve stuffing I have ever seen, and I am sure they would be super fun at a big dinner. So mix your butter with your grease and set that aside, then take bread and mix it with butter and then put the butter and grease inside and generously add butter on top. Did I get that right? Sounds wonderful.

This comment is highly underrated. Funny story... well, better to laugh than cry... I had an experience 5yrs ago at my new(at the time) boyfriend’s mother’s house. I quickly learned that being invited to dinner really meant “come cook me dinner”, which I don’t mind at all because the woman is not a cook nor does she claim to be. 😂 She had the turkey cooked but the rest was up to me. So there I was, with not nearly enough ingredients/vegetables for the number of “guests”, stress sweating under the pressure of ravenous people I didn’t really know. This was not the moment to demonstrate my meticulous fussy assed culinary skills, rather “getter done before they kill and eat you”, kind of situation. Long story short, my new boyfriends daughter, and cousins ,swooped in and cleaned up the last of the potatoes, on her rounded plate, before everyone was served. She’s 20yrs old. 😳 I DIDN’T EVEN GET ANY POTATOES!!! I sat my sweaty ass down at the table in shock and awe at what I was witnessing while nibbling away at the turkey, pale gravy, 2 broccoli florets and tablespoon of quash on my plate. It was like I had entered into the Twilight Zone. I guess the moral of the story is, it’s not all about the food. Also, don’t go to dinner at Kathy’s. Maybe it’s “Don’t sweat the small stuff”...???

I was thinking it might be easer to freeze the stuffing in a silicone ice cube tray or one of those cylinder trays they use for ganache that's put in chocolate lava cake. Food for thought 😀
John I also made these for Thanksgiving and everyone loved them. I used spicy chicken sausage instead of Turkey and it was amazing. However, stuffing the stuffing looks much easier in your video🤣!
I put the cold gravy in a pastry bag and piped it into the finger well. Worked so well!

Judy, I have gluten intolerant kids so usually replace bread by oat flakes and, as they are also vegetarian , use mushroom instead of meat.
