Gotta say Al, that was a mighty fine looking corned beef! Love the idea of smoking it before the braise is fantastic! The colour inside is intense. For us, probably a Guinness stew is amongst our favorites to cook with beer... or a good beer-batter fried fish! Thanks for this!
Hi Susan! I miss beer battered fish. Actually one of the best I've tasted was at a pub on the CA side of Niagara. I think that's relatively close to you, no? Maybe when I can finally come up there again I will try to find it. Unless you're cooking.........B-)
Great video. Best beer cook for me is smoked then braise ox cheeks in Founders KBS espresso. The coffee profile went so well with the mega meaty cheeks.
I have a love hate relationship with Corned Beef... I tried once. Might have to try again. Might... I still taste the salt from the last time every time I think about it.
I used to have that problem until I started doing the 6-hour soak after curing (replacing the water 1-2 times part way through) - since I started doing that the salt is tamed and it makes room for the flavor I want to get in/on there. Let me know if you try it again how it turns out! -Al
That look Good. Now want Corned Beef and Hash. PS I know you have no problems washing your knifes. It is the pots and pans you need work on and with beer consumption yes 1 is fine to cook a hot dog. Need a small keg to make corned beef

@@BehindTheFoodTV I did 1 corned beef cook that turned out very well, but used a wet brine vs dry...I think I'll give the dry brine a shot next!

You should try making smoked veal ribs and smoked venison ribs as well
