    I have a Traeger ironwood 885. Had it for 7-8 years. Bulletproof. Ribs at 225 for six hours. Dont even need to open the grill until you take them off. That’s for baby backs not spares.

      I’ve been doing the 3-2-1 method for years. 3 hours uncovered, 2 hours in foil with a little beer in the wrap, 1 hour uncovered with sauce. It’s as good as I’ve had at any BBQ joint.

      @ I tried that with my first Traeger and wrapping them seemed to overcook and the meat fell totally off the rib. I prefer being able to have the bite mark on the rib. My best result is the 5:30-6 hour at 225 no wrap. The Traeger makes it easy for sure. Happy New Year!

      @@joepoelzl There is a real danger of getting hurt if you start your smoker closed. Read the owner's manual or google it.
