Just a few recomendations, use sour weapon like the battle axe, she is weak to sour, learn how to parry that is crucial, or, if you dont want to learn how to parry use the rollypolly armor set, and always mithiadrism mutation. Its also good to take some granola bars or smoothies as they heal you and buff you ;)
From all of those i would recomend you to learn how to parry everything, it takes some time, but is clearly worth it

I recommend rocking the sour sensation mutation & mithridatism and also bringing a lot of soothing syrup’s made with a base of muscle sprouts

You can perfect block so you don’t take stam and just Fr go all in when fighting

Going in with basically no armor was not the best plan. No rudeness intended, but it seems like you're not very familiar with the combat mechanics in this game based on how you fought. You should really learn how parrying and positioning work more before attempting a fight on a black widow. It's the hardest non boss enemy in the game.
