I'm from Texas and when I visited SC, I loved hash!! SC BBQ and Texas BBQ are equals. But, they are incomparable. The reasons for the meat chosen, cooking methods and seasoning are different. I love em both as if they were my own children
My dad use to cook hash in a big black pot and I would watch it cook ,he didn't use corn just pork, beef ,and chicken if he had a fresh rabbit he would use it to , he used ketchup and onions and a few more seasons and that was it, oh I forgot the men always had a quart of moonshine to help them concentrate😊
Ward's BBQ, BBQ Hut or mostly any other BBQ place near Sumter seems to serve 'red hash' and THAT is the best hash. I never knew there was any other kind. My grandma made 'red' hash a good bit and it was just hash no one ever made a distinction that it was 'red' hash. I ordered hash and rice in Pickens once and got a lump of light brown colored mess. I learned that day that not all hash is created equal :)
They don't know what they are missing!! Hash and rice is SOOO Good!! I moved from Chas, SC to Tennessee and now I can't even get hash and rice!! I do miss it!!!
Hash is a staple down here in Aiken County South Carolina. This is where it originated from. The best hash that I have found is at Shelly's BBQ in Batesburg Leesville SC. It's somethin else!
I always understood it to be a low country staple you could find just as you got into the midlands. I grew up eating it, but have never made it. I think what they do in the upcountry is a much different variation, at least looks like it.
I was born and raised in SC and will no doubt die here. I have been making BBQ hash for decades. the problem with most is the BBQ joints like dukes loads it up with potato's. I don't, I use meat, no fillers, and mine my not be the best but it will till the best comes along,,,,,,,,,,,,,,,
@@jerryhubbard4461 I'll be honest with you... When I go eat hash I don't ask to see the receipt from the kitchen about what they paid per pound for the products/ingredients. I just consume it and if it tastes wonderful like Maurice's you better believe I am A-OK. Try pricing out some caviar... It is super expensive! Me? I prefer boiled peanuts... And they happen to cost a lot less...I guess I need to focus more on the cost of things vs taste when eating...

The point I was trying to make is beef hash, the real hash that this lady is making, cost a lot more then pork hash that Maurice makes. Here is where profit as in Maurice overrides quality. The lady does not make the profit Maurice does as his business is all about volume and profit. But be assured, the beef hash is the quality product. Most that have never had real beef hash don't know any better. Once you have some, you will see the difference.

My grandad was Colie Free and he made the best, even canned it out there at his farm in Greenwood and sold it, there was always a waiting list for it, his country ham, liver pudding and sausage. He and Bailey were best friends he was a pallbearer at my grandads funeral. My grandad taught me how to make his hash.I make it on the 4th of July and on special occasions. I believe I might be related to Mrs Ruth as well. Her hash was a bit soupy. You want the best hash? Come to my house.
There a small place in UNION S.C. That make Traditional barbecue(pork), as well as beef hash. Its usually served over rice and I have seen people drive from states away to this little place in Union called Midways barbecue to get hash by the gallon. You will be able to find it in abundance in the upstate of South Carolina mainly around the Greenville /Spartanburg/Cherokee county area around July 4th. Fire houses and many others places cook “HASH for donations and To raise money for various causes. Remember upstate South Carolina Fourth of July, out of this world.
Duke's BBQ in Orangeburg SC if you are ever in Orangeburg just ask anybody where Duke's BBQ is and anybody you ask can direct you there. Warning they are only open on Thurs, Frid and Saturday. Try it if you ever pass by Orangeburg SC!! You will be glad you did!!!

I can make the same hash this lady has here. SC hash is made with all beef as she is showing here. Any other recipe is not real SC hash but some kind of concoction of one that does not know hash. Chef Jerry
That's not hash. Hash is mAde with chopped chicken, grounded beef and pork. I don't know what that is. My family has cooked hash for centuries. In Georgia. Also that's a recipe stolen from Black African American.

Maurice's hash is about as sorry as it gets. Real SC hash is made from beef as this lady showed. Maurice ia pork, cheaper.

Dukes has the best mustard based bbq in my opinion. Bessingers makes good sauce, but they smoke hams only. They both have good hash!
