You can't beat salmon in a kamado and like you I no longer order salmon at a restaurant. 140 is the temp tp pull and it's a quick cook, I do mine with generous spread of Heath Riles or Sucklebusters Honey rub or a finish glaze of original honey. You won't find any restaurant adding a chunk of apple wood in the broiler or searing pan...maybe a little smoke in a bottle to cheat, great work, they only get better.
Nicely done! Double stacking is an awesome feature! People have even triple stacked grates, but lowering the lid is a bit tricky an probably not too safe. That salmon really looks delicious!
Looking great coming off the Kamado, and Cedar plank! I think salmon is the greatest food item to smoke off! Keep them coming! Pizza is greatness!

I double stack all the time. I thought about triple stacking but it seems like it would be very tall and I’m not sure what I would use it for.
