    When my two adult children come home they love to go "grocery shopping" in my pantry! They load up a few boxes of canned goodies ! This is why I can, for my family ❤❤❤!!!

    And now I want a freeze dryer even more than I did before. Wow. This is my first year where I've had enough space to really do all this kind of stuff and have a garden so I'm still in the early evaluating stage of things. I really like how you approach it. In the beginning I was making huge batches of everything and now I'm working on smaller batches of things so that I know we'll actually use it all. Thanks for another great tour!!!

    Hello, I am completely blown away! I am almost at a loss for words at how fantastic your pantries are! I have not done a lot of preserving in the past but have decided to give some of your recipes a try, on a much smaller scale. I, have also decided, once i get my current pantry and my cupboards all organized to try and pressure can. With that being said, i am not going to be going out and buying the biggest canner, but one that i use for both water and pressure canning. I live in an apartment which gets very hot in the summer so my canning list will be short, enough things i can do and use within six months. I am so looking forward to trying some of your recipes out. I am of the same mind as yourself when it comes to trying new flavours and new cuisines. Thank you for all of your hard work, with testing recipes and procedures. It definitely gives me incentive to do more! Stunning pantries! Have a wonderful day!

    Your pantry is beautiful! Lots of hard work but so satisfying to know where everything came from and that you made it. I also love pretty things on my canning shelves…. I did a LOT of pepper relish this year and also tried your mango salsa. My family gets a big box of everything I have preserved at holiday time and then they restock as needed. We use a lot of tomato products so canning the freezer tomatoes works well.

    My kids and grandkids shop my shelves so they help clean things out. My girls and some of my grandsons help me can so it works. I am still working trying to make sure and can what we will actually like when it comes out of the can. This year I want to work on more meals in a jar just to have more of a variety.

      So glad to have you here, Roxanne! It is so tempting to just can everything that appeals to you, isn't it? Smaller batch canning or canner sharing sessions (more than one recipe or item canned at the same time) may be an approach to try. For instance, next Saturday's video is on 3 different chicken items I'm canning at the same time so that I don't end up with more than I need of any one item, but I'm still only creating one mess.

    Peppers are my favorite too. I love all kinds of peppers next year. I wanna make a whole bed with peppers this year. I kind of have them scattered. I won’t plan them so close together cause I think you told me or someone else told me that don’t plan them too close, but I will plan them in one bed🌱🌱

      Hope you have great results with your peppers. Mine have done very well that way. Next year I plan to experiment with spreading them to different beds. We'll see!

      I have consistently found that planting them closer together by varieties, in well composted organic material rich beds with mild organic fertilizer and epsom salt at planting, produces an abundance. I also surround my pepper beds with my bulbing onions. Onions were huge this year and more peppers than I knew what to do with. I gifted many of both. I do not rotate my pepper beds either. Maybe my zone 5, is the beautiful result. I think the good Lord provided, personally.

    I was hoping you'd be doing a tour video! I have made so many of your recipes that are keepers. I made the chili without beans yesterday. I got 6 quart jars and I make a triple bean in quarts with pinto, kidney, and black beans. I add that to the chili when I heat it up. We also really like the steak sauce and we go through chicken and pork the most. Thank you!

    For canning sausage, use your instant pot to cook it (same with hamburger). When done, break up with a meat club (don’t know the name of it, but it has 4 sections at the top). Then, put in your jars and process. Works great and so little mess!

      Thanks. How many pounds of meat can you get in your InstantPot. I never use mine, but I feel like it's too small for my purposes.

      @ I have 3 sizes, but use my 5 qt the most - I can get 4-5 pounds of ground meat in it for this purpose. My 8 qt can do about 8. Since you don’t want to completely cook it, I put it in frozen (we get it from local butcher in 1 pound wraps) for 15 minutes with 3/4 -1 cup of water at the bottom and put the meat on a slight lift.

    Thank you! I loved the video! I wish I was this organized and have to work on that. I have found myself not using enough of what I have canned and this has been a problem of jars going three years before being used.

      It does take a bit to get into the rhythm of cycling through what you already have canned. I have found that the pantry challenge in Jan/Feb and smaller personal challenges throughout the year really help to keep me on track.

    Amazing job Carter!! Also in defense of David, the SW Black Bean Corn soup is to die for. I canned up several jars as a part of my prep for Hurricane Helene just incase I needed soup and honestly I could eat that out of the jar if needed. Well I didnt have to but oh my goodness, I have never had the name brand version but I seriously doubt it is anywhere close to your version. Will definitely make more and try others too. 😍

    I went hog wild with cowboy candy and relishes in 2022. I still have a lot to eat through to this day. Would love a freeze dryer to try that method but economics prevent that at this time. Keep up the great work. Just recently did the canning of potatoes without liquid and we've been loving them. I make fried potatoes and add the quart jars to soups and stews for a much better flavor than the old fashioned way of canning potatoes. I learn a lot from you so keep on keepin' on! Next project is the meals in jars.

    Hi Carter! I've been listening to Rfk jr. He says it could take a few years to replace our poisoned food with new nutritious foods. Many are saying we need a 2 year supply! Personally I have noticed a lot of our basics have disappeared! So you may want to rethink the 750 and keep it at 1300 plus. Most will last 3 years anyway so you can't really error if things do go downhill! This week, I freeze dried pineapple and potato dices are in now! I also finally used the sous vide and made peppered turkey breast lunch meat! Also replenished my schwarma 15 servings in the freezer, made two loaves of bread, and canned blueberry syrup and cranberry juice! I still have a case of frozen blueberries to get in jars. I still have enough pie filling so will probably just can as light syrup berries!
    Finally got to Costco, but they did not have all on my list. I did come home with avocados and organic eggnog lol. I was ashamed of myself for falling for the warm and delicious smelling loaves of walnut and rosemary breads at 17$. I could have made them myself for only 2$ but I guess I was hungry and gave in! They were out of chicken thighs but I did get my ground turkey to make lunchmeat! Have a great week

      Hey, Connie! Agree that I had much rather be overprepared than underprepared. Our food system is a mess. I too have noticed so many things that are no longer reliably around. Costco has has had many holes lately. Please let me know about your avocados from Costco. For the past 3+ years, every time I have tried them again, they have been horrible. I used to buy them there all the time, but something changed just before we left Atlanta. $17 for their specialty loaves now! Yikes. They do know what they're doing with all the bakery smells and testing stations, don't they? So glad you used the sous vide! It's pretty awesome, isn't it?

    Carter, what an excellent video. Thank you so much for being so descriptive and thorough through each section of your food storage. You simply have the prettiest pantry on all of UA-cam - I kid you not! All of your jars look divine!
    I know all of that hard work must give you a great sense of satisfaction, and it certainly benefits all of us as well.
    And I know I mention this often, but I'm going to do it again because I know Keto is not the easiest diet to stick to by any means. But it has certainly served you well. Your skin, your hair, your nails... everything about you is glowing. It is truly working well for you. And you deserve a big ol pat on the back for sticking with it! Yay for Carter! I'm back on a lower carbs after losing hard earned muscle while on keto, but what I've learned about different diets is that everyone is different.
    I appreciate you so much for taking the time to show us your pantry and to teach us on this journey called food preservation. I'm learning so much and enjoying the process as well ❤

    LOVE 💕 YOUR PANTRY with all your beautiful canned goods!
    Mine is so spread out some here some there would love a place specifically for my canned goods! And who doesn’t love looking at all the beautiful jars?!
    I eat very low carb, so I need to stick to meats and non-carbs veggies, but oh, I want those sugar free jams, the ones at the stores, who knows what those ingredients are? Anyway, I did make a no sugar cranberry jam last year but didn’t use a recipe who knows if I can get lucky like that again? lol. It flew off the shelf! Thank you for sharing your beautiful pantry with us!!!

    Love this video’! I can a lot of soup for my husband too. His favs are ham and bean, split pea and ham, and sausage-kale-white bean soup.
    I love your meal in jar series. I remember you did sandwich fillings. Are you out of those? I’d love to see a paprikash or savory cranberry chicken. I’m also with you on the jams. I have SO MANY flavors at the moment

      Thanks, Karen! David asked for split pea soup last night. Thankfully that was one of the ones I had left! The sausage and white bean soup was the first to go in my house. Definitely need to make more of that. I bet he would like a ham and bean as well. Thanks for the ideas! I only have a few of the sandwich fillings left. Maybe a meatball and some of the Italian Beef. Having good keto bread options available lately has really made these a fun option. Oooh...paprikash. I don't have any Hungarian flavors on the shelf. That could be fun. Savory cranberry chicken sounds delish. I'll have to give that one some thought. Do you have something specific in mind? I'm thinking I might get some oddly colored chicken!

      @@growandpreservehubby and I went to Budapest this fall and fell in love with paprikash. I think it can be canned and then add the sour cream/yogurt when serving.
      As for the cranberry chicken, I think it’s kind of like a tangy sauce. There’s a popular recipe for turkey breast, cranberry sauce and onion soup mix in the crockpot. Thats what I was thinking but you always come up with healthier, tastier recipes 😊

    I love this video. So neat and organized. One thing I have not had much of on my shelf is soups so I’m now working on that. One soup I love is the Japanese clear soup with mushroom and spring onions. I have found recipes, but nothing on the processing time for canning. Do you have any suggestions?

    Your pantry is amazing !!! It’s my dream pantry. I too am keto/low-carb…. My goal was to lose weight, I have managed to lose 30 kg, and I’m almost at my goal right now, but I agree with you, i feel so good and so much better that I can not see myself ever going back to eating sugar or lots of carbs.

    Looks like you are almost set for the pantry challenge this year. Maybe your kids or extended family would like the jams and jellies if you are intent on getting rid of them. Maybe you could make some fruit gummies for Christmas gifts or for hubby ( sorry forgot his name and don't want to get it wrong by guessing).

    Carter, thank you for sharing. Your food preservation and planning is incredibly intentional and quite admirable! I'm such a newbie I'm just getting the hang of food preservation and organization. My space is limited so I'm having to be careful with my available food real estate and I want to can everything. lol. You mentioned canned bacon. What convinced you that canning bacon was a good idea? Actually, what do you consider when going against "the grain"? I would love to do the same, but "they" have put the over the top fear of not branching out and away from the "rules" firmly planted in my psyche.       Thank you, bluebird! Really great question about the bacon. I actually said on an early video that that was one thing I would not do. Never say never! In the case of the bacon, it was a couple of longtime canners whose judgement I trust that tipped the scale for me. I am not one to rebel can "because I can", and I'm not a believer that "if it seals, it's good". Having done several rounds of bacon now, I remain comfortable with it. Now you have me thinking about a bacon sandwich for dinner!

      You are right, Donna. I will be gifting lots of sweet things! I'm clearly going to enlist your help in getting jars back from my son! How is that so hard?? I do work on recipes that aren't quite there...just ask David how many soups he had to try for the soup series! Sometimes it's obvious what's missing, so it's easy to try again. Sometimes it can be just that the final product doesn't warrant the time and resources. Those I tend to just let go until it hits me what may improve the product.

      I don't personally can lamb because it's so expensive here. I tend to save lamb for a beautiful leg of lamb or lamb chops that I can cook and serve mid rare. However, I don't see any problem canning it. Like with any meat, just pick cuts that have a bit of fat so they don't turn out super dry. I don't can sweet potatoes because I can't get a product that suits me. I store them fresh as long as I can (generally 10-11 months) and then slice, roast and freeze what's left.

    I have a question I hope you can answer. I make a quick jambalaya by buying a lot of the vegetables in cans. One of can goods is tomatoes, oka, and corn. Do you water bath this or presser can it

      Hey, Debbie. Are you asking about just canning the tomato/okra/corn mixture? Definitely pressure can. The okra and corn are low acid. As for timing, that's a bit trickier. Usually we would use the timing for the ingredient that needs the longest time. In this case, that would be corn at 55 minutes for a pint. However, the NCHFP guidance for "mixed vegetables" is 75 for a pint. That seems quite long to me.

    You did great but Tina the ones that you say you don’t want maybe you can give them as gifts maybe your children or somebody you know you know I give out preserves to like the landscaper or the guy that’s gonna come and cut my tree down I’ll give him a preserve orsome of everything I have that I have abundance.     How do you can rotisserie chicken? Do you just purchase the cooked ones from the store or what do u do? Sounds great.

      Pick the meat off, pack it into jars, clean rim, lid/ring --no broth added-- then pressure can. Pints 75 minutes, quarts, 90. I buy turkeys when on sale, oven roast (same temperature as turkey at Thanksgiving) but not as long a time. I prefer to pull out when internal temp is around 150⁰. Let cool enough to not burn your hands, pick off meat - I prefer to have larger chunks when possible. Then pack & can same as described above. I think poultry canned this way is SO much tastier than with broth added or raw packed. The already roasted meat will produce some additional juices when you can it.
      I prefer to roast turkeys in my oven roaster so that one meat is picked off I can just put all bones/skins into the same pan, add water (onions, celery & onions added are good too) then on low 200⁰, let simmer for 24 hrs. Strain & then pressure can lots of really yummy stick.

    I really like following Keto but I love tomatoes and I eat so many that it throws off my macros. I struggle to stick with it. That's the only sugar I eat, it's surprising how fast it adds up!

      Do they throw off your ketones and blood sugar? Macros are an easy target to track, but the only thing that really matters is how your body responds.

      Welcome, Danielle! I bought the Presto Electric Pressure canner 2 years ago and have used it almost exclusively since. That's well over 1000 jars pressure canned using the Presto Electric. I love it. I have not had a single issue with it. I have zero safety concerns with it. If something happened to it, I would buy another one immediately.     I was confused when you said that you loved your canned rotisserie chicken when you don't want shredded chicken. Are you saying that rotisserie chicken stays in chunks, as opposed to raw pack which does not? Thanks - love your videos!

      @@rachaelpainter Rotisserie chicken video next Saturday. However, I didn't address rotisserie versus hot pack. I find that Rotisserie provides the best "pieces of chicken" results for me. Baking a whole chicken, then hot packing the meat comes in second in my experience. Hot packing chicken cooked boneless produces the driest meat in my experience. My guess is that something they inject in the rotisserie chickens is likely the reason it does best (sticking my head in the sand on that one), but cooking it on the bone produces a good result too.

      They're not a crisp as fridge pickles, but they hold up ok for the first couple of years. After that, anything pickled starts to get pretty soft.
