I am doing keto and it makes a huge difference to get rid of the sugars and stick to proteins and dump the empty carbs, you just mentioned the ice cream at this point, enough said. Words of wisdom right here, I used to get migraines all the time when I was eating like Taylor. I started eating keto in 2015 and dramatically reduced my migraines. Then over a year ago I switched to zero carb (carnivore) and haven't had a migraine since. My hiking performance increased dramatically as well since getting rid of carbs. I can do big mile hikes in the Whites with lots of elevation gain while fasted and never lose energy. I can't recommend keto or carnivore enough for hikers.
