Miss Lou, veggie styled pastelles too - heavenly!!! I saw a lady use lentils as the "meat"- the key is to season it with the same - olives, capers and raisins. Simplicity is the ultimate sophistication, let's keep treasuring all our simple moments. Nice garden tour Mr Lance.

I enjoy looking at you and your husband. I also just learnt how to make a perfect pastel. I am a Trini , left Trinidad at 18 years so I never learn to cook there. I look at Trini cooking shows and that is how I learn to make Trinidadian food especially from your daughter in law Ellis and Lasana. I love them both and the kids. I am now 71 and feel like I am in my forties. Lol. God’s blessings to you both and keep the love blooming between both of you.

I have a pastelle exactly like that. My husband made it over 30 years ago. Still going strong. I use a piece of plastic from a rice bag on one side to press the balls on the leaf.
Not pressing too hard, just the placement of the fig leaf on top. It's slipping when you pull down the top. So put the fig leaf On the dough ball THEN bring down the top. Great job. Miss Louise, you can get the Roucoo,i hope I spelt it right, you can get it at the Arima market, inside the market where they sell the herbs and spices, just remember that they cure it with salt, so you have to be careful how you add your salt in your dishes.
