It would incredibly greasy. The slow cooker yes, not browning and draining the meat first no. Browning the meat also gives it flavor.

Do the veggies come out hard? And do you cook the spaghetti separately

Pasta separately, vegtables will go soft if you cook it right.

If you don't brown the mince when you let it go cold you will be left with a lovely layer of fat🤮
