I am a teacher and have taught many kiddos to knit and crochet. For the littles, you may want to start with a loom that they loop stitches over and over with a crochet hook, They get to see a finished product and can make a snake with the coils of knit. if you want o teach knitting. with older ones I start them with about 12 stitches on a needle with 8 rows done, In that way, they have a chunk to thold on to. I stand behind them, or they can sit on your lap and knt while they put their hands on mine. They get the rhythm and work into doing it independently. Also, use a poem: In through the front dorr, run around the back, under the fence and off jumps Jack!" Once they get better eye hand coordination, I teach how to cast on.
My kiddo for the longest time loved to just stitch on plastic canvas with yarn scraps, we used pony beads too and it just turned into a fun creative mess.
