Estonia does not have much in a way of ethnic cuisine. You could count dishes that fit the bill... on one hand. Estonian food, much like most baltic state cuisine, is more akin to nomadic food than actual dishes. Food for travel and survival rather than enjoyment. Influenced by centuries of slavery from slavic, nordic and germanic forces, baltic states and especially Estonia... are somewhat cuisine agnostic. A beautiful amalgamation of dishes with bold imagination is the closest to "Estonian cuisine" we can get.
We do agree that it is hard to nail down authentic Estonian food. During this video I tried to find the answer for myself and really loved the take that Daanius Aas has on Estonian food. Overall I feel very excited for the future of the food scene in my country!
It's crazy you picked such expensive spots in Tallinn. There is so much better choice at all price points. Tallinn is so expensive now that most of the videos seem sponsored

A bit funny, you eat in expensive cafes in Tallinn. Estonia is bigger than Tallinn, travel around Estonia. In central Estonia, southern Estonia, especially southern Estonia, you will see a completely different culture, different tastes. Look for a contact who hosts real Estonia, traditional food and also real life in areas of the country that are not Tallinn. When you see real Estonia, these videos are wrong. But as a simple tourist and seeing the everyday view, Tallinn is a good place :)
We wholeheartedly agree that there is so much amazing stuff to see and eat around Estonia. This channel is specifically focused on Tallinn hence why so many recommendations and videos are around Tallinn (Do check out our Tartu video from this summer).
