  • This is an old fashioned recipe for Buttermilk Cornbread that I've been using since I was a kid. When I buy buttermilk I do all of my buttermilk cooking. I make buttermilk cornbread, buttermilk pancakes, buttermilk biscuits and buttermilk pie. It never goes to waste here.
    I'm not a fan of drinking buttermilk, but it's delicious as an ingredient.
    My granny and my paw used to crumble up cornbread in their buttermilk and drink it. If you've never done that, give it a try, you might like it. If you don't like it...then at least you can say you've tried it :)
    Ingredients:
    1 cup - All purpose flour
    1 cup - Corn meal
    1/4 teaspoon - Salt
    1 teaspoon - Baking soda
    2 teaspoons - Baking powder
    2 - Eggs
    1 cup - Buttermilk
    1/4 cup - Real butter
    2 tablespoons - Real honey

    Youall only need to buy Buttermilk one time... When your Buttermilk starts getting low, just add some regular milk to it and it will turn into Buttermilk!!! Keep on doing this and you will never run out!!!

      Say what? Btw, the BM today is not the same as in yesteryear as the old BM was so much better. Now the BM is done for speed.

      Elliott that EXCELLENT tip is so true!
      However, a word to the sticklers out there, this isn't really buttermilk, it's clabber milk. (Buttermilk is what's left after the butter/butterfat has been removed. Clabber can be churned to make good butter and buttermilk.)
      But clabber can be used in place of buttermilk.

    I was born and raised in middle TN, as was my parents. We made cornbread like this, except bacon grease was used instead of butter. And nothing to sweeten it. Sometimes buttermilk and sometimes regular milk. Depending on what was available. My daddy always put leftover cornbread in a glass of buttermilk and eat it with a spoon. For us, he would take some leftover cornbread and put butter and corn syrup on crumbled up cornbread. That was our desert. Loving your videos, I just found them. And my mother had one cast iron skillet that was used for cornbread only. And ya better not use it for anything else. For she would bring down the wrath of God on us. LOL

      Same here, my mama was from Mississippi and she and my grandma used bacon fat or lard to make corn bread in a skillet. And never anything sweet. Putting sweets in it would be similar to putting sugar in the beans. But I think honey would probably be a good thing to put in beans. This recipe here comes out of the oven looking like mama's. And it doesn't have sugar. I wonder how many kids who grew up in homes like ours still have this on the table now or are we the last generation that will remember it.

      My dad was also from TN and we had cornbread and soup beans almost everyday. I remember him getting a glass of buttermilk with crumbled cornbread and eating it with a spoon many evenings.

      Momma made hers pretty much like this, but with only one egg and nothing sweet. She used approx. one cup of buttermilk, one tsp. salt, one tsp. baking powder, 1 tsp. baking soda...one cup of flour and another of white corn meal. The bacon fat (or crisco) was melting in the skillet in the warming oven. She'd take out the hot cast iron skillet and pour the excess of the fat into the batter (about 1/4 cup after she made sure the skillet was coated well). and Pour the mixed batter right back into the hot skillet and stick it in the oven. After about 20-25 minutes she would upend the cornbread (turn it upside down) in the skillet so it was flat on top and the bottom would get really crispy against the skillet. 10 more minutes and she'd cut "pie wedges" of the cornbread and we'd eat! Yum.

    I seem to have grown up with the same recipe as most of you. We never put sugar in our cornbread! Yes, we often had cornbread and milk for supper. Yum!

      Same here unless we were making corn pone sticks in a cast iron corn cob shaped cast iron pan. Serve with honey butter. Exquisite!

    I’m making me some cornbread today with meatloaf & stewed potatoes. Good ole comfort food. I’m a southern gal born & raised in Tennessee. My granny taught me to cook. I absolutely love feeding my family.
    My kitchen is my sanctuary.

    Mmmm...Buttermilk! I love anything buttermilk is cooked in, but I cannot drink it. I have tried numerous times & I just can't!...Pinto beans, fried potatoes with onions, slice tomatoes & buttermilk cornbread! Nothing better!

      @@francesbevel2467 , a good meal indeed. Was raised in Missouri. Sweet cornbread was considered a dessert. Johnny Cake. For eating with regular food no sugar...accckkk, my Momma would've had a hissy fit if she knew one grain of sugar was in cornbread. During the Civil War, Missouri was neutral. I guess the Southern states used sugar and the neutral or northern states did not. Wow such a fuss over a little sugar....lol...😊

    You can make an alternative buttermilk by adding 1 Tablespoon distilled vinegar to 1 cup of milk. Let it rest a few minutes. I use it all the time for perfect corn bread.

      You can also add a teaspoon of lemon juice to your milk! Whew...this makes me hungry for cornbread...lol! God Bless! 💗

      Would I be able to make buttermilk from my lactaid milk? I have a severe intolerance to regular milk and have to get the altered milk. Everytime I read recipes like this I get jealous cause I really want to try it!

    This is the best recipe for cornbread! My Daddy's from West Virginia (Deep Water) & my Mommy's from Tennessee (Knoxville), I grew up on buttermilk cornbread! Pinto beans made with bacon, real butter...& Yes! Cornbread w/buttermilk in a bowl! Yummy!!! 🤤Oh! W/onions on the side! 🤤🤤🤤🤤

    I preheat the oven to 450. Pour some oil in and put the pan in to get hot. While that is coming up to temp, I use 2 cups self rising cornmeal, 1 cup water, 3/4 cup buttermilk, pour in a hot cast iron skillet. It cooks about 25 mins, at that point I’m just looking for color. It is the crispy. And delicious. This recipe was on the Martha White self rising bag for years. It’s not anymore. I’m 62 and this is the only cornbread I love. I also keep powdered buttermilk on hand and no one could tell in side by side test.....lol

    I just love you dear lady. You are like generations removed. I’m #7 of 14 siblings, and yes, mama and daddy were definitely involved in our rearing. 😊

    Your recipes remind me of ma and pa Jackson growing up , they were our Pa's parents! They were of the Last of the ' sharecroppers' here in the valley and Nothing went to waste!!!! Absolutely nothing !!! I helped make butter, milked and fed cows , goats , etc.... In my 60+ years I have seen it come full circle , I'm happy to say!! , and Homesteading is being recognized as a Good Life 😍

    Just told my wife, we’re having red beans tonight and corn bread , really an excuse to have corn bread ,here in Louisiana we serve fried fish with cornbread and beans , some serve pork chops, some fried chicken, love your videos

      Darren Jones I've had all three of those meats with beans and cornbread but I also love to have raw onions with it. Sometimes mom would even go ahead and fry up some good potatoes with it. Man it's 12:45 in the morning and my mouth is watering just thinking about it, LOL!

    Self rising flour here in Oregon is now 8 to 10 bucks a bag. Was so happy to find this!! Its been years since I made anything without self rising flour. Love love the videos

    I love the old fashioned cornbread! I actually love it with milk for a snack. Just crumble it up in a glass of cold milk. But, there is nothing better than pinto beans and cornbread.

    That cornbread looks great with a slab of butter on it. My oven went on the fritz the other day and can't get a new one in time for Thanksgiving. Im cooking the entire thanksgiving meal this year in my cast iron dutch oven using a open fire, weber grill, and my smoker. The weber can be used like an oven. This will make me practice my off the grid skills. Thank you for the old school proper recipes.

    Love the buttermilk baked IN the cornbread, but would rather drink my own bath water, than actually drink buttermilk ! I tried, at the instance of my family. They love it. But, like boiled okra, beets and mayonnaise, I can't do it, even though firefighters are supposed to like most everything. Great recipe here, thank you so much for sharing with us !     Ahhh... memories! This is how my sweet mom (RIP) made cornbread (cast iron skillet, of course..lol) and how she taught me to make it! You can't beat a good ole cake of cornbread with some fried taters and pinto beans! I also love to make it when I make homemade veg. beef soup or chili. I never could develop a taste for drinking or eating buttermilk with cornbread, but my daddy (RIP) sure loved it! To me, forget cereal the next morning. I love a bowl of cornbread and sweet milk (IF there's any cornbread left...lol)! Yum!!! I'm going to go do a search for your buttermilk pie, now!     Im going to diffently try this. I also dont buy buttermilk so what Ive done is sqweeze lemon juice in milk and let it sit foe awhile. It curdles and thickens a bit. Better than plain milk.

    My dad (92) tells me his father crumbled up his cornbread in a glass of buttermilk. I make mine with Martha White self-rising cornmeal, no honey or sugar, & regular whole milk. I use bacon grease instead of butter. Great video as always. God bless.

    Any kind of Milk and cornbread is called hillbilly cereal . I love it and to this day I still eat it . Nothing better than warm buttery cornbread in a glass of ice cold milk .

    What I do with regular full fat buttermilk is measure it out in half cup increments and pour into several paper cups and put it all in the freezer. All the little cups. After they freeze then remove them from the cups and put in a freezer bag. It thaws our great without separating.

    I have watched at least a dozen different people on U T make what they share is good Southern corn bread. To this time I have yet to see real Southern corn bread made. I learned from my wonderful grandma. I made some today to make my Southern turkey dressing. Real Southern corn bread you must use fat back grease, butter milk, egg, of course Iron Skillet. And one or two more ingredients. Good luck ladies.

    My granny was from southern Oklahoma. She always used white cornmeal and no sugar. I really liked hers.

    Hi Becky thank you for posting. It's in the oven now. The only difference I melted my butter in the microwave and used bacon grease in my skillet.

      That's a good tip to keep the butter from scorching if you take to long getting the batter ready.

    My dad’s favorite meal is white or pinto beans with onions & cornbread made in my mom’s iron skillet. I used butter instead of bacon grease last night after watching your video. God bless you.

      We sometimes put chow chow in our bowl of soupbeans and cornbread and onion. Then of course we also had maters and fried taters and sometimes mom would fry some pork chops, too. We are from Kentucky.

    My mom's from Oklahoma and her parents were from the Ozarks in Arkansas. She always puts a tablespoon or two of sugar in her cornbread. I've heard Southerners say "true Southern cornbread doesn't have any sugar in it!", but that's not necessarily so. Mom never poured it in to the point its super sweet "corn cake" like so many corn breads you get outside the South are.

    Your buttermilk cornbread looks so good. In addition to eating it the normal way, I like crumbling it up in a bowl with milk poured over it as if it was a bowl of cereal. I was raised on eating cornbread and milk for dessert many a night. Thanks for sharing.

    Jean Jean, I'm a dyed in the wool liberal who practices an Eastern religion. The Hillbilly recipes are wonderful, especially the cornbread. Thank you Hillbilly Kitchen for taking me back to memories of my grandmother. She was raised in MO. Looking forward to trying other Hillbilly Kitchen recipes. In such a divided county, I think that food is something that can bring us together.

    I totally love all your recipe's I've watched, and you probably know this, but in case you haven't done it, to make real cultured buttermilk, just get a carton of cultured buttermilk at the store, then get a quart jar, and measure 1 cup of the buttermilk and 3 cups of milk, I use whole milk from the grocery store, give it a shake and let it sit on the counter for 24 hrs or more, until it's buttermilk, and when you run low you can save a cup and make more, you can do this for about 3 times. I make it and drink it, and it is just like buttermilk from the store. being from the south myself, that's how we did it. and I do it today, for the cornbread, I love it. I like it sweet so I put sugar in mine. also I love buttermilk and cornbread, tks for the recipe and God Bless. Nicky still snowbound in Michigan.

    I made cornbread last weeks, and had no buttermilk, I added 1/2 cup of sour cream to my milk, it was so good.

    I really love to use saved bacon fat instead of the butter. I use a black cast iron skillet and this skillet is only used for corn bread, my granny also showed me this when I was about 14yr, today, I am 74! I typically melt the bacon grease on top of the stove until it begins to smoke a little, then I pour in the corn bread batter and put it into a 470 F oven for about 20 minutes. I typically use about 1 tsp or 1-12 tsp of bacon fat. I typically flip it onto a plate immediately after removing it our of the oven.

    Ooooooh, this is so good. Made it today. Used an 8" square baking pan and it only took 20 minutes to cook. My husband really liked it. He always wanted me to add sugar to my Jiffy mix so I was good with the honey. May God continue to bless you and your channel. Mrs. Kennie Kennard

    all my family was from Arkansas -- yellow corn meal, buttermilk, and NO sugar --- Lord it was good !! then there was fried hot water cornbread; salt and hot water, fried in hot grease -- lots of butter on top when you ate it ( white corn meal, not yellow LOL)

    I was looking for cast iron skillet cornbread like mama used to make when I was growing up and I think you got it. The round crack in the top of the bread I remember. Mama never put in anything sweet. And I believe she may have made it with lard or bacon fat. Her mother used to make it in the fireplace back in Mississippi before they got a stove! And of course always in cast iron.

    I don't add the butter to the mix but leave it in the skillet. It soaks in as it cooks and makes the pan non stick pulling the corn bread away from the sides telling you it's done....and yum.

      I do that with my butter also, leave it in the skillet. It helps with seasoning the skillet. If you treat your cast iron right, it will become non-stick. I can scramble eggs in my cast iron skillet and it doesn’t stick at all. Great recipe for the cornbread too.

    You can add little vinigar about 1to2 tbs to milk taste same and works same as buttermilk recipie learned from Martha Stewart years ago been doing ever since . that way can always use in recipies I bake alot so cheaper to.hope this helps you because I still learn alot of tricks from you.

    This the way my husband does it. Lot time he uses bacon grease. I save bacon grease for a lot of things. Somethimes he use butter and heat it like this. Pour the hot grease in the mix. My mom do that too. One of my grandmothers added onions to her cornbread. Gave it a great flavor. Buttermilk don't last like it used to. Even sweet milk or low fat milk sour fast and smell bad. Nothing last long anymore. I do add onions to my bread like memaw did.I love cast iron pans.butter or bacon grease I always put the pan in the oven to beat the fat. It makes the best corn bread. My husband mom taught him. My mother I learned from watching her. My husband serious about his cast iron skillet cornbread. My father after working from 7 to 11 would come home get a bowl, crumble up some cornbread add buttermilk and eat. He didn't want go to bed hungry. He said that hit the spot love, respect, and positivity always. Vj.

    If you squeeze some lemon juice into regular milk and microwave it for 30 seconds it curdles into buttermilk. That's what I do when I'm making Soda bread. I'm gonna try this recipe tonight, thanks.

    YUMM! You can add a spoonful of vinegar to regular milk to create buttermilk ...Also My granny used to use ''blanky'' (starting to sour milk) to makes breads which also turns out nicely ...Can't beat old time cookin

      +Ozark Cottontop My granny had a small farm. She made her own butter and buttermilk. It was of course, it was unpasteurized, unprocessed, fresh and tasted totally different. I really miss that and her... Nothing is better than old time cookin!

    My mother used to eat white cornbread in regular whole milk that came from our cow.
    She would eat leftovers so they would not go to waste.
    She would also eat bisquick biscuits in coffee with some sugar. I liked that one myself LOL.

    Gonna have to try this recipe .... but in the 🧇 waffle iron. My dad loved to make cornbread waffles on (usually) Sunday mornings. He would sometimes use a mix and other times a recipe. This seems like it would work just fine. I know it will be good done as it's meant to be made here, lol. Have an AWESOME week. *LK*

    Great Presentation! I'm going to add Garlic, Ginger and Jalapeño. I'm sure my poor sick chickens will love it. We use organic wheat and corn. You s/b using organic too to steer clear of Monsanto Glyphosate.

    Finally found my Grandpa's #5 cast iron skillet...I hope you're happy with yourself there missey. Just ruined Jiffy Cornbread Mix...I'll never be able to eat Jiffy again. LOL! Thanks for sharing the recipe...Mama ate half the skillet with her beans and fried taters. By the way, the #5 is 8 1/8". Thanks again.

      Look carefully at the box of Jiffy mix and you will see the word muffin. A muffin is usually a sweet item and that Jiffy Muffin Mix is definitely sweet enough to be dessert!

    This will be my first attempt at making corn bread. I have 2 questions. First, is it okay to bake it in a stoneware loaf pan?
