  • A British classic and the ultimate comfort food! Delicious golden Yorkshire pudding with sausages crispy on the top where they are peeping out of the batter but amazingly tender sitting under the pudding. The batter seasoned to perfection with my new line of seasonings and served straight from the oven with a yummy onion gravy. Toad in the hole - definitely no croak of a dish :)

    The recipe for the batter...
    Yorkshire pudding
    Makes 12
    225g all purpose flour
    ¼ tsp salt
    4 eggs
    1 cup milk
    ¼ cup water
    Salt and pepper
    ½ cup vegetable oil or good beef dripping
    Preheat the oven to 425 degrees f
    In a large bowl add all of the ingredients together and whisk until smooth.
    Divide the oil between the 12 cup muffin pan and place in the oven until the oil is smoking.
    Whisk the batter again and divide between the 12 cups and return the tray to the oven. Bake for at least 15 minutes or the puddings are golden brown and have risen. Serve immediately.

    I wish I had seen this recipe a few years ago. My Mom's parents were both born in England and she was always very proud of her English heritage. We always had Yorkshire pudding with the roast beef for Sunday dinner. I don't think any of us knew about this. She would have loved this, especially as she got older and often didn't have much of an appetite. I'll have to try it.

    Frog on a dog!! I roared laughing at that!!!! My mum made a fabulous Toad in the hole using up gravy and batter from the Sunday roast. So a Monday dish for us. Buttered cabbage with it too, as per tradition was divine!!! I liked the teaspoon of redcurrant sauce which mum added to the onion gravy sometimes, just so tasty!!!

    Rest of the world“English food is awful”. Darren “hold my beer while I educate you” as a chef who just graduated university with my culinary arts degree it’s great to see a chef that isn’t plagued by mainstream tv and money and actually has a solid career behind them. Gives me something to work towards

      @@robertthompson90 also an English man speaking. A lot of the Lithuanians, Romanians and polish I’ve met as well as a few American through work all seem to think that our food is bland and boring as well as that everything needs to be in bread or served with gravy. Well at least that’s my experience with foreigners I’ve worked with

      @@robertthompson90 it's good food, not as good as Spanish or French cuisine is but it can stand on its own.
      The stereotype comes from 2 things, the propensity of these insular had to boil the flavor out of everything, and now for real one: because the rationing they had to do during ww2 and many years after it was over until they bounced back, those years left them with the reputation of horrible bland cuisine. But if you see their traditions of pies and other roasts you can see it's a lie, channels like towsends can show they do have tasty food, it's just that that period ruined their reputation.

    We grew up with popovers in the Midwest USA and they were always served as a side dish with meat. Love your channel and learning how to make all the British classic dishes.

    Darren mentioning the sausages peeking out reminded me of Stargazy Pie. I had regular fish pie when I visited London but it would have been cool to try a Stargazy pie.

      Stargazy pie comes from Cornwall or Devon not London if you Google it should tell you were it originally comes from p.s am north of England

Unlike the previous girls, this one kept spitting & hissing at me, so i told my cat, no, she's not coming into the family. I picked my cat, brought him inside, closed the door & resume dusting my room. In the kitchen sink was a bag of 1kg of fish, waiting to be cleaned. Moments later i heard wish wish wish sound. When i peered out, there was my adult but tiny male cat half way through the hall, dragging the bag of fish, hoping to share it with his new girl

    We had toad in the hole often when I was young because we all loved it . Yorkshire pudding was a big favourite with us kids and Mom always made lots . Thank you , Darren , for sharing these delicious English recipes .

    I read Danny the Champion of the World as a kid, and they talk about this dish in that book. I remember being so fascinated and wanting to eat it. Roald Dahl must have liked it a lot to write it into his books.

      It's an awesome dish. Quick, cheap, tasty and also good practice for mastering the secret of the pudding, ie hot oil/beef dripping. Needs a good gravy like this, and I grew up on it served with fresh peas, carrots, string beans or whatever veg was ready from the garden.

    I had always wanted to try both Yorkshire Pudding and Toad in a Hole. This past Thanksgiving 2021 week. I tried both. I did Yorkshire Pudding on Sunday and then Toad in a Hole on Thursday. I enjoyed both of them. I plan on making them more often. Thank you for being a inspiration.

      I've screwed this dish up more than any other dish so be warned 😂 he put a lot batter in that dish the only way I can do this reliably is to be very conservative with the batter less is more for me,
      I put a fairly thin covering and then it's perfectly cooked and the batter isn't mushy but instead has a great crispy and chewy texture,
      If I put that much batter in like he did I would be a sloppy disaster but would look great from outside,
      Obviously hes cooked this recipe plenty of times,
      I do want to try this recipe but am a bit worried as I've never pulled of a deep batter toad in the hole lol.

    When I was growing up we used to have Toad in a Hole and it was for breakfast and we would cut a hole in a slice of bread, then put in down in an oiled pan, then crack an egg into the hole. After a few minutes, we would flip the bread and then eat it!! I have also heard it called Egg in a Basket or Egg in a Nest.

    I just found your channel and love it. Well Done! I also want to applaud you for teaching us all traditional British recipes, I also feel we are getting the authentic British cuisine! My family came from England to America in 1630 so that must be the reason I love everything British. Thank You for sharing your wealth of knowledge and for sharing your recipes (and stories) and helping us convert them so to speak. For instance I cannot find the type of potatoes you have in England that many recipes call for but you told us a good substitute that we can find here!!! I think you are a delight and cannot wait to watch the rest of them and possibly cook along. I have tried many Yorkshire recipes and I have only been successful once. The rest of the time I have over cooked hockey pucks, and I must say I have been cooking for a long time so I am not a novice. I know you mentioned there were "tricks"....hhhmmmm care to elaborate? LOL
    I think the resting is the key.
    Keep up the great work and I would love to attend a British Cooking Class if you have them.

    Hiya Darren, I love having found you, feeling a bit homesick these days, so appreciate the great recipes you share here. I live in the Colorado Rockies now at 10k ft above sea level. I'm from the UK, unlike you, I haven't a hint of an American twang, kept my Cheshire accent - weird as I'm from Notts. A n y w a y ... in 15 years I have tried a variety of Yorkshire Puds, but watching your process definitely changed the end result. I've kept up with the Bero Baking Book since I was young (nostalgia) so this attempt at Yorkshire Pud recipes for altitude. Having watched your video I set off again, I used the Bero recipe, followed your steps, added water and an extra egg, often mentioned at altitude.     Parker’s makes great British Cumberland and Lincolnshire sausages right here in US. They are based out of New York and originally from Yorkshire. Their pork pies are great too.

Here in Canada I am almost sure I can find British sausages but just in case I cannot, I am not fond of the Italian sausage. Can you please recommend another sausage for this comfort food.       Just used wot you have at home doesn't matter as long as you your family like it am from uk you can used pork,Lincolnshire, pork and apple any thing but wot l dont understand is in America and some parts of Canada they used spices sausages or Italian sausages am not used to spicy sausage like that do you have butcher's shop in Canada or America were you can get normal sausages from just interested

    I still feel funny when someone says "Yorkshire pudding", because to me a pudding was always something sweet, like rice pudding or banana cream pudding. But I'm getting used to it and watching you make these holed up froggers I am impressed and I'd love to try them. The one you served yourself, with the dark onion gravy made me want it .

    I just made this! Oh wow, it is SO good! The gravy is the key but the mixture of the flavors is amazing! I think I used a bit too much flour because my batter was thicker than it should have been, so next time I'll thin it out more. Great recipe! I've already shared it with my sisters :-)

    I did have toad cooked in tempura batter on one of my trips in BiH! Delicious, light and crispy! Toad in the Hole is more substantial!

    I totally never knew what toad in the hole was. I thought it was toast with a hole in the center and an egg poured and fried in it. Clueless 😂😂😂 So now what is *THAT* called? Thanks for schooling me 😍

      Toad in the hole is actually, on very rare occasions, used to refer to toast with a hole in the center and an egg poured and fried in it; however, it usually refers to the sausage dish shown in the video. The more common names for the toast-and-egg dish include any one of the following:
      Eggs in a nest (the most common)
      Egg in a hole
      Bullseye eggs
      Gashouse eggs (this is the one I grew up with)
      Eggs in a frame

    @DarrenMcgrady I was taught How"Toed in the hole" got it's name is at one time some men were out in the field either hunting or because of a war, and their cook was asked to make something hot and good. One of the men felt the early morning moisture from marching made them feel as slimy as toads, and that the were holed up around the fire for warmth, so the cook just named it "toad in the hole" for both the memory of his comrades and the comfort of the food. That may explain why Ye Olde recipe had pigeon meat instead of sausage, but when meat was scare a replacement were mushrooms which are also found early morning while foraging.
    I just wanted to share that story with you.

    I put oxo cube in mine. Given whatever meat it is. It gives a wonderful taste. And if don't have appropriate meat I use veg oxo.

      Pigs in blankets is sausage wrapped in bacon people in uk usually have it with there Turkey at Christmas or Easter dinner

    Batter/fried sausages/hot dogs-USA call them Corn Dogs. Toad In The Hole is what both Grandmas called a piece of bread w/a hole torn out of the center that is then fried & then a egg was dropped into the hole & everything fried.
