  • COCONUT DROPS RECIPE/ROCK CAKE -TRINI/TRINIDAD/TRINBAGO
    3cups- Flour
    2cups-Sugar
    1/2cup- Milk( Different flours absorbs liquids differently so look at the texture of the mixture the more firm the better)
    4oz- Butter
    1 egg (add to the milk)
    2cups- Grated coconut
    1cup- Raisen
    1/2cup- Glazed fruits
    Angostura bitters to taste
    Essence to taste
    1tsp- Vanilla extract
    1tsp- Mixed extract
    1tbsp- Cinnamon
    1tbsp- Nutmeg
    2tbsp- Baking powder
    METHOD:
    STEP1- In a bowl combine the flour and butter using fingertips.
    STEP2- Add the coconut to the butter and flour mix, and combine well.
    STEP3- Add the sugar to the mix and blend well.
    STEP4- Add cinnamon and nutmeg to the mixture, and combine.
    STEP5- Add baking powder to the mix, combine well.
    STEP6-Add raisins and glazed fruits to the mixture and combine
    STEP7-Make a well in the center of the mix and add all the wet ingredients, milk, essence, extract, and bitters.
    STEPP8- Using a spoon or your hands, incorporate the dry ingredients into the wet.
    STEP9- Grease a baking tray and using two forks to place the batter in balls on the tray.
    STEP- In a preheated oven set at 350 degrees, place drops to bake,until golden brown.
