  • Join the green salsa revolution! Tom Williams, of Tom Knows Salsa, takes us into the fields and the kitchen to share his passion for green salsa. We learn about the tomatillo, and Tom’s drive to make a delicious green salsa in Vermont. The Vermont Food Venture Center is the Center for an Agricultural Economy's food and farm business incubator and food hub.
In our new Meet The Maker Series, we want to share with you the wonderful stories and visions of twelve of our farm and food partners. From cocktail syrups and hot sauce, to grassfed beef and chevon, the VFVC and our Business services team gets to work with many diverse local food system partners. The reason why it's tart and bitter is because he boils the tomatillo until it bursts. If the tomatillo bursts, then, your salsa will be bitter and tart. It's not supposed to be tart and bitter. A white boy salsa is what you get.
