These were delish but they dried out after a day - however that could be my buckwheat flour that is on the outs. Do you think I can sub oat flour for part or all of the buckwheat?
+C HF hello….Hmmm I’m not sure if oat flour would work. I’ve tried to bake muffins a few times with oat flour but they don’t seem to hold and are crumbly. I tend to freeze my leftovers or gently reheat the muffins the next day. I find when you bake with less sugar that don’t stay as fresh. Hope that helps. 😆
